We were told we would need to pay the processing fees and when the pig was ready for slaughter we called Santa Fe Trail Meats, arranged for the specific cuts of meat we wanted, including smoked pork chops, bacon and even suet. We were told we would be contacted when it was ready. This past Wednesday, 10/2, we received an message stating it was ready for pickup and would be there for seven days. Today, Friday, 10/5, he arrives to pick it up and it is GONE. Picked up by the business who we won it from and now 45 minutes away. This after my husband had driven over an hour in the opposite direction of work and home (and work is already 1/2 hour away). He's now on his way to pick it up from the company that we won it from in the drawing. Santa Fe Trail Meats...you SUCK. I hope we never have the misfortune of doing business with you again.

Hides are scalded and scraped, which we prefer to skinning. The owners source from local small farmers, even purchasing pigs from 4H students, so we are not only supporting a local business but local farmers and young farmers in the area as well. The pork is always of excellent quality. Highly recommended. We're fortunate to have an abattoir like Santa Fe in the area.

I was a little disappointed that they didn't have a whole lot of block cheese, I only saw a few blocks/flavors. They had a few more choices for the curds but still limited. I was also looking for regular summer sausage since I had not tried the jalapeño before and wasn't sure if that would be too hot for some of my family. Supplies could have been limited since it was the middle of the week and late afternoon. They did have freezers with a lot of meat options such as steak, chicken, pork and they also had pies! The owner Becky was so knowledgeable about all things cheese, meat, and gourmet treats (and moved to Emporia from New Jersey)! We got to sample a lot of different things, left to explore, and returned before closing to buy our goods. She provided us a cooler and we bought a small bag of ice down the street. There are pestos, tapenades, jarred beets, and other interesting items on the shelves. There is a frozen case with locally raised meat. Yet the star of the show is the case in the center, with cheeses and charcuterie galore! The menu organizes the cheeses by blue, single serving cheeses, soft, semi-soft, firm, and hard. There is a large list of salamis and then whole muscle meats. There were two items I was interested in that were sold out, the duck prosciutto and the queijo toledo. I will have to make my way back! I ended up buying from the single serving cheese a truffle chevre (which I had tonight with fennel, it was amazing), petit basque (my friend Melinda C. asked for a sample and we were all blown away by it), Saxonshires (five cheddars layered in colorful stripes: Double Gloucester, Chesire, Caerphilly, Leicester, and cheddar), and bresaola (salted, air-dried Italian beef that I usually have to get at Dean and Deluca in KC). Melinda C. bought the bay blue and chevrelait (smoked goat) besides a few of the same ones I got. We both are so excited that tomorrow we are having a bread-cheese-cured beef smorgasbord for dinner! Bring your cooler bag and ice packs to Emporia because this place is a must-stop (and has really cute decor too)!

I've been buying cows for about 11 years. I have 3 farmer buddies I buy from, and through them,…read moreI've used multiple butchers. I can confidently say that Paradise has been the worst butcher I've ever used. Is the product I received good? No. Did I receive everything I paid for? No. I've been buying through this specific farmer friend for about two years now. He decided to try out Paradise because they are closer to him, as opposed to driving several hours to the butcher we had used before. Well, this is where the nightmare began. He picked up the beef and delivered it to my house on a Saturday morning. He and I unloaded the truck while my wife loaded the freezer. Before he left, he told me to take the receipt and double-check that we weren't missing anything. The receipt ended up in one of the boxes used for delivery, so I didn't check it right away. We didn't look for it until Monday and by that time our farmer had already left for vacation. Once he got back, he sent me a picture of the receipt, and we went through our beef. To our dismay, we discovered that we were missing all 24 steaks and one roast. As soon as I realized this, I let my friend know, and he immediately notified Paradise. That's when the headache began. They told him to have us count again, make a list of everything we are missing, and contact them with the list. My wife called them, as they had asked, and their response was, "Well, we don't have it, so your farmer must have taken it." My wife was pretty shocked at this point because we had done everything they asked, yet their immediate response was to dismiss the situation and basically accuse our farmer of stealing the steaks. I contacted my friend and he called the manager to let them know we were less than impressed with the customer service at this point. They apologized and said they would help resolve the issue. Well, that turned out to be a lie, as they never returned a call to my friend until he threatened to get his lawyer involved. By this point, we had cooked our first batch of ground beef and it was a disappointment. In 11 years of buying beef, I've never received such low-quality hamburger before. Normally the hamburger I've received has been 90/10, maybe 85/15. This junk is 70/30 at best! We cooked 4 lbs of beef and drained over a pound of fat. It was so bad that we had to drain it twice because it wouldn't cook properly-it was literally being boiled in the fat. My other concern is that if they added an extra 15% of fat to the hamburger, shouldn't I have more packages of beef than usual? I can tell you I have no more than I've ever had when buying from other places. Well, they finally called my friend back, and he informed them that not only was I missing meat, but the quality was also sub-par. He told them they needed to figure out how to reimburse me for both the missing items and the poor quality ground beef. The manager said, "give me until Monday and I will call you back." Once again, that turned out to be a lie, as we haven't been able to reach them on the phone again. I was never asking for all my money back, or for them to substitute for the missing product; I just wanted a refund for the items I never received and a portion for the terrible hamburger. My recommendation to others at this point is to look somewhere else for a butcher, as Paradise's customer service is terrible. You might never hear back from them, the meat quality is poor, and you might not even receive your full order! My question is: Where did my missing steaks go, where is the extra hamburger, and for goodness sake, where's your phone?

I do not eat a great deal of meat but when I do... I want quality. I was ill prepared for the wonderful experience that awaited me. The person that helped me, Brian, was terrific. He was super knowledgeable about products, preparation and taste. He even steered me away from higher priced items for lower priced things he thought I would like better. He was thorough and patient with my endless questions. He is very well suited to his job. They have all sorts of items in this quaint shop. They have cheese, jams, jellies, bread, eggs, kitchen equipment. From outside the shop, it does not appear to be very large inside and it isn't necessarily large.. just well packaged. The meat selection is vast... beef, pork, buffalo, chicken, lamb.... in every configuration you can imagine. They have steaks, ground meat, jerky. I learned so much just talking to Brian. There is ample parking and this store is located in a strip mall so there is easy access. Everything is sparkling clean and has a very nice atmosphere about the shop. Tremendously impressed with this gem of a shop.
