They have a vegetarian and meat version of it and both variations are delicious. The broth is rich and packs a punch and noodles cooked al dante ensuring they retain their texture instead of turning soggy. Soft boiled egg was just as we expected it to be. We got a refreshing beer to accompany our ramen. Note that the spicy ramen is indeed SPICY, I went with a level 3 and had to take a couple breaks to make it through the bowl. The place itself has a fun interior. Service was friendly. I am so glad we decided to bike all the way to the Norrebro district for a meal here, it took us about 20 mins from our hotel and eating a slurpy soupy bowl of noodles post that on a chilly night was such an experience.

We have stuck by this restaurant through several misses, portion reductions, price increases, and multiple recipe changes (mostly for the worse - fx when they changed the Spicy Goma from pak choi to cabbage and later to an entirely bland, white broth - at least the broth has changed back to its original now but you still pay more for a smaller portion and significantly cheaper produce). But this August and today especially will not be tolerated: 9 days ago, much to our surprise, the free water that has ALWAYS been out at Ramen to Biiru was removed to impose plastic bottled own-brand water (how effin stupid, stop commodifying natural resources). Hot tip: in Denmark, restaurants are not allowed to deny you tap water. Ask for a glass of tap water and you don't have to buy into this stupid capitalistic hellscape. Today, we place our order and hand the waitress our neighbour discount card and stamp card - only for her to point at a freshly printed and framed A4 sign to her left declaring that pr August 1st, these cards are no longer accepted. Of course, this comes as another great surprise seeing as we were there just over a week ago - still very much August - and our cards were accepted just fine. Today as well, we had a free ramen to enjoy - well, no we didn't. When the first of our ramens came, they were cold and the waiter had his whole thumb in my ramen as he served it. Disgusting. The last two ramens (we were 5 together) came over 20 minutes after the other three, and by then the rest of us were obviously done eating. Such poor priorities. The staff is doing what they can, but unfortunately the Mikkeller owners are wet for profit and profit only. In the last year, the management has made extremely poor choices - surely benefiting their pockets in the short run, but guaranteed to hush all their regular and loyal customers far away. Luckily, there are many new ramen places in town and none of them include Mikkeller. Choose a different restaurant.

Dialed the restaurant and found out we were about 3 miles away and CPH only has taxis - so we had to walk back to the city center to hail one. Front of the house was so graceful about the whole ordeal - told us not to worry and to just get their safely. Truly took the burden off us! The food - let it take you on a head to tail journey. Incredibly well thought out food - locally foraged and harvested ingredients. A beautiful bounty of Scandinavian ingredients, manipulated with the utmost precision. Chef presented several of the courses - inspiring to hear the descriptions from the creator himself and he was so authentically engaged when we peppered him with questions. At the end of the night it was a bit challenging getting a taxi back - even Chef got involved in the process. The humility and graciousness, stunning. All memorable and fantastic. Wouldn't change a thing.

The noodles were well-cooked and plentiful. Toppings-wise, you get kimchi, shredded beets, shredded carrots, corn, two pieces of soft tofu, bean sprouts, and green onions. That's the 3rd CPH ramen place I've been that include kimchi as a topping, and I don't think it works, as it creates too much acidity. Anyway, good stuff overall. We asked for tap water to drink and they charged us 30 DKK (assholes -- such a stupid thing that many places here do), so bring your own if you want to avoid wasting money on water. What a fool I am! In my Studieskolen days, I passed by this place many times but figured it was…read morelike most Japanese-Korean mix establishments: BAD! However I was pleasantly surprised and now I know where to get my Korean fix in Copenhagen when I'm feeling homesick. Since it was a very cold day, I wanted something hot and comforting. The Samgyetang menu (310 dkk) appealed to me especially since it comes with small sides (banchan). Normally this soup is eaten in the summer, but I think it also goes over well on these winter evenings. Our server brought out a whole cornish hen sizzling in the stone pot on a wooden trivet with salt and pepper on the side. Spot-on presentation! However there was no ginger or glutinous rice inside the chicken, much less jujube or ginseng. Although chicken is the star of this dish, the rice and herbs play a huge role. This was very disappointing, even though the meat was cooked perfectly and falling off the bone. Before we were served the main (Korean) dishes, we received a little Japanese appetizers. One was a spinach salad (ohitashi) and a shrimp salad with bean thread (ebi sunomono). These were very nice and refreshing but of course I would have preferred a Korean starter. Soon after came gyoza/mandu, which was good. Right before the mains came out we got the banchan, and so prettily arranged! There was seafood pancake (haemul pajeon), carrot kinpira, kimchi, potato pancake (gamjajeon), and seaweed salad. The kinpira was a bit out of place, I think beansprouts would have fit in better. Though they were a little oily, the pancakes were good. Now the kimchi was excellent! I can say this with confidence since I am Korean, I've been brought up eating kimchi, and I do make my own. You can even buy it by the kilo here. Good to know. At the end of the meal we got a scoop of sickly-sweet strawberry ice cream and a pretty but not very tasty strawberry for dessert. I would have preferred green tea ice cream or even some seasonal fruit, the latter being more common in Korean cuisine. Since it is winter I would have been ok with no dessert and just a cup of ginseng tea instead. Although the missing ingredients in the samgyetang made me feel cheated, the banchan was mostly good and so was the service. I look forward to trying more authentic Korean dishes here.

It was a truly fantastic experience. Fish so fresh and from the top of the chart. It was an intimate experience with the Danish chef explaining each of the 23 courses. The service was impeccable throughout the night and the atmosphere is cozy (hyggelig). The main room has 8 guests (low counter) in two seatings per night and is the best selection for couples, whereas the back room looked suitable for a (very) small group. The sushi is in a class of its own.
