It is an extraordinary retreat where history, landscape, and luxury come together in a way that feels almost cinematic. Castello is atop a hill in the Tuscan countryside, the property occupies a restored 10th‑century castle within a large 4,200‑acre estate of vineyards, olive groves, forests, and fields. From the moment you arrive via a winding, cypress-lined road, it feels as though you've stepped into another era (as if driving through a forest). The setting alone is breathtaking, with sweeping views of rolling hills that stretch as far as the eye can see. The atmosphere is one of timeless, laid-back elegance. Despite its large scale, the estate feels peaceful and secluded, offering a true escape from daily life. The historic architecture such as stone walls, vaulted ceilings, and rustic details has been meticulously preserved, while contemporary design elements ensure comfort never feels compromised. One of the hotel's strongest aspects is how seamlessly it integrates with its surroundings. The estate is actively lived in, with agriculture, local production, and outdoor experiences shaping the guest experience. Dining at Tosca ristorante at Castello di Casole was a highpoint. The restaurant highlights traditional Tuscan cuisine, using ingredients grown directly on the estate...olive oil, wine, and seasonal produce. The food was exceptional, with a focus on authenticity and quality. We sampled items like baby squid, bread and oil, tortelli, and seabed amberjack. Service was one of the defining features of the hotel. Our servers were attentive, professional, and personable Memorable meal... Castello di Casole d'Elsa is a nice anniversary splurge that captures the essence of Tuscany in both style and substance. Even our driver Marian, our driver for two days, was unbelievable. All of the places he suggested to us were perfect for our group. He was on time and went above and beyond in every way. It was one of those "buy the ticket then figure out when you're going" situations (if anyone else does that...). Luckily, this wound up being a great decision. The Relais is the quintessentially charming Italian getaway we were hoping for. The staff is exceptionally friendly (and for the most part speaks nearly perfect English - a major plus when your Italian is as cringe-worthy as mine). They really were fantastic. Be forewarned, the resort itself is about 35-40 minute drive from the actual city of Perugia. There is basically nothing on-site except their passable restaurant and a small spa. It's perfect for people who really want to unwind, but not ideal as a home-base for touring the area. (One half-star off for this.) The restaurant on-site is OK, but honestly was one of our least favorite meals in Italy. (Another half-star off for this.) We wound up going down the street several times to a small place called La Locanda del Colle; you will absolutely need a reservation because it's tiny and DELICIOUS. My recommendations if you pass through and decide to stay in the area: brace yourself for the most unbelievable views, morning and night. It's truly breathtaking! Also, if you are looking for a wine tour, we really liked Gusto Wine Tours. They are local and regularly pick folks up from the Relais. (No Yelp page so just shouting out here!)

Breakfast was included and if there was a weak link it was the coffee machine drinks. Our room was large and had a terrace and a stunning view. The bathroom was very large and well appointed. The property has 2 pools, a bar and is close to wine tasting and other restaurants- but, really, it is so beautiful you don't want to leave. The grounds and buildings are very old, historic. You feel like you are living in Italian history here. Great service!

I think the food mostly lived up to that hype -- we really liked just about everything we got, and loved certain things. We got the beef tartare, lampredotto, spicy spaghetti, pici, the fluffy frittata, cheeses, and the cioccomirtillo for dessert. The pastas were our favorites of the night (especially the green olive pesto with the spaghetti), and the only thing we really weren't crazy about was the frittata. Overall, very good food for a high price that I think is somewhat justified, but also somewhat hard to swallow when there are so many great restaurants for much cheaper in this part of the world.

For context we are a family from San Diego, California that regularly goes to Michelin level restaurants. So, that said a 1/5 stars review is not to say anything was terrible at Il Falconiere but I am holding it to the standard we know for Michelin starred establishments. The service was uneven at best. One guest in our party politely declined the welcome champagne as she does not drink alcohol and the waiter appeared downright offended. The Michelin standard in this situation would be to offer the non-alcoholic sparkling option as a substitute in my opinion which was not done, though she did later discover it on the menu and order a glass for herself. Our waiter also corrected one of the guests that "noodles are Chinese" when she was clarifying an order for one of the children at our table trying to order them pasta with cheese. Perhaps saying noodles is impolite in Tuscany but Michelin level service should not be rudely correcting guests like this. The food was fine but again for a one Michelin star restaurant the attention to detail just was not at that level. All four adults did the tour of Tuscany 6 course tasting menu while the children had pasta and chicken. Temperatures and textures were off and to be honest I can do better job at home with duck breast which was tough and gamey. Credit where it is due the pasta course was incredible and a standout. Lastly in terms of value this just does not stand up to other nearby restaurants in Cortona where we have regularly been impressed by the value and quality of meals. Just last night we had a meal for 9 (6 adults and 3 children) with multiple courses (appetizers, pasta, meat, dessert) and a bottle of wine for 350 euros out the door. Here lunch was 950 euros for 4 tasting menus and 3 children and a half bottle of champagne. Obscene prices for the quality compared to nearby Cortona restaurants. I had another dinner reservation here for later this week which immediately canceled after lunch. I cannot imagine spending more money here.
