I had breakfast here with friends a few days ago. First, the restaurant is beautiful, classy, roofed but open in the front (no worries, Guadalajara has wonderful weather), you're greeted by a gorgeous old carriage, and by staff dressed in traditional charro attire. The menu is extensive, offering a variety of chilaquiles and many other entrees. There are red, green, mole, poblano, and other kinds of chilaquiles from which to choose. I had some with egg, and extra grated cheese and loved it. The ambience is casual but nice. You could go dressed up or casual and fit in. I would have taken more pictures, but I didn't want to be rude to my hosts who invited me. If you like Mexican food and chilaquiles, if you are ever in Guadalajara you need to ensure Los Chilaquiles is on your list of places to go. The service we experienced was first rate. We had cafe de olla and some dishes that made for an amazing brunch. We ordered a plate of Arrachera with tortillas and Bistec Encebollado (steak with onions) with beans. On the same plate we had chicharrones en salsa, a breakfast staple in this city. To balance the heavier dishes we had a Jugo Verde drink made from fresh pineapple and parsley. Since I was one, I was seated immediately in a table for four. I ordered cheese quesadillas and a limeade. Wait staff are plentiful and walk back and forth between tables. The place gets packed. The quesadillas come with beans but they're cooked with lard. At no extra cost, the waiter was able to substitute the beans with steamed veggies. The food is delicious.
