History
Established in 2013.
Long Shot Coffee is the second venue from Walker Evans Baker Restaurant Group.
Located in the prestigious Collins Square precinct, WEB RG is in the first stage of creating a new dining destination for Melbourne. Led by partners Lang Walker, Pete Evans and Gavin Baker, our team's existing and upcoming restaurant projects cover a range of dining and drinking experiences, all designed to match the quality, modernity and sophistication of the Collins Square development and its blue-chip residents.
Meet the Manager: Shaun Q.
From humble beginnings in Toowoomba, Queensland...Shaun's first job was at the local McDonald's flipping burgers and manning the registers for the discerning clientele of Toowoomba's inner west.
"I felt I was playing devil's advocate while working there but apart from the food, I couldn't have asked for a better training ground planning for a life spent working in hospitality. Organisational systems for absolutely everything and a clean as you go mentality were both ethics that were drummed into me there and I still work by them to this day... Thanks Ronald".
Shaun has had the privilege of working with culinary institutions that push the boundaries and challenge conventional concepts of food preparation. These have been Quay (Sydney), The Royal Mail Hotel (Dunkeld, Victoria) and more recently Urbane (Brisbane) and Biota (Bowral).
As Executive Pastry Chef for the Walker, Evans & Baker group, Shaun is responsible for all things sweet and baked.
