Cousins Francisco Aguilar and Alexis Chacon relocated from Oaxaca to open this mobile mariscos operation. But Simon's seafood-forward menu is innovative and sophisticated, seemingly more at home in a sit-downery than a mobile food cart. Unsurprisingly, Simon has been lauded by news outlets and food critics abound. I've been dying to try Simon, but the limited and often unpredictable hours have kept me from it for months. My partner and I visited for a late weekend lunch and ordered immediately. We opted for 2 tacos (the Soft Shelled Crab and the Baja-style Fish) and a Large Aguachile Negro, and our made-to-order meal was prepared within a few minutes. Between the tacos, the crab was a clear winner. The crispy, whole crab was well-complemented by the fresh pineapple salsa and the rich chipotle crema. In stark contrast, the Baja-style fried fish was one-dimensional in flavor and ran on the soggy side, owing to the watery pickled cabbage slaw. But not even the crab taco could compete with the stellar aguachile. We couldn't get enough of the marinade's rich blend of acidity and smokiness, which overshadowed even the generous helping of fresh shrimp. Simon's complimentary salsa lineup also exceeded expectations. We most enjoyed the earthy salsa macha and the smooth, creamy salsa verde, but the tangy salsa Simon -- the truck's take on taco sauce -- was no slouch, either. Our bill totaled just over $30, and the meal felt reasonably priced and appropriately filling. While the tacos didn't knock my socks off, the aguachile certainly did -- I can't wait to return to try some of Simon's other varieties.

The meat was juicy, perfectly seasoned, and carved fresh. What really surprised me was that we completely forgot to add lime at first, and they were still amazing on their own. That's how you know the flavor is solid and doesn't rely on extras to carry it. My partner ordered the buche tacos, and they were done right perfectly crisp without being dry. Great texture and well-balanced flavor. Simple, authentic, and consistent exactly what you want from a taco truck. The quality speaks for itself, and now we can confidently say we've found our taco spot in Glendale. We'll definitely be back.

My go-to is the carne asada burrito, good size, good flavor, and always comes out hot. Sometimes I'll add a couple al pastor tacos, hard to pass up when they're slicing it fresh. Line can get long but it moves fast. Prices are fair for LA and portions are good. You're basically standing and eating on the curb, but that's part of the taco truck experience. Giving 4 out of 5 because it's still a taco truck, not the cleanest setup and no real seating, but the food is consistent and always hits the spot. I keep coming back.
