    I highly recommend this place! Great food, vibes, and drinks . The waitstaff took care of us and they seemed genuine in their service. They put a lot of thought and care into their actions. The food was great (I got the fettuccine and husband got the rigatoni). The fettuccine carbonara was presented with a cheese wheel where they prepare it in front of you. I also got an espresso martini and it's one of the better espresso martini's I've tried. The drink was well balanced in flavors. If you're ever looking for a nice italian restaurant, I highly recommend trying this place out!!

    Very nice new Italian restaurant within Grupo Rosanegra. Loved the atmosphere here. They had an Italian chef singing and then had an electric violinist performing for entertainment. The service was great and everyone was very attentive. Had the wagyu pappardelle which was pretty good but the steak carpaccio was amazing. I also had the tiramisu espresso martini which was delicious! Come check out this new restaurant in the Cancún hotel zone

    Celebrating our anniversary at Parole

    Parole is grouped in with about 5 other great restaurants built along a board walk on the lagoon across the street from all the ocean hotels. It's almost hidden at the entrance but it's visually so beautiful as you enter in. Parlore's service and food is fantastic and if you are a foodie, you will really love this place. My wife and I go there for our anniversary most every year and they make it special! Love this place and the other restaurants in there with it!

    Food was ok, but the ambience made up for it. I had the gnocchi and it was pretty good, wish there was something more to it because it was just cheese. This guy starts going crazy on the violin and there was dancing. It was hype

    Food, drinks and atmosphere is great. Entrance is built out over the lagoon and it's beautiful, artsy and impressive. This entrance is for 3 restaurants in the group. Singing opera chef and a painter with fun ending was entertaining! We missed the violin player and fireworks. Other tables were escorted closer to watch, but not ours. We were there celebrating a 60th birthday! It was not even acknowledged, Even after telling waiter again. Other people celebrating received a song with sparkler's and a dessert. The waiters staff was under impressive for this high end restaurant. After being seated it took them a long time to identify we were present! Bottled flat water we requested was split between 3 of 4 of us that were at dinner and 1 person received none. Our waiter would walk away mid conversation and no acknowledgment. We spoke with Karim (manager at mamazitta next door), on our walk to Parole, he noticed we had a bottle of wine and mentioned they would be happy to open with corkage. Our waiter Francisco denied us opening the wine. We ordered meatball appetizer and poached pear spinach salad to share. Our entrees included pappardelle Wagu bolognese, lasagna and lobster with fettuccine. All the food was delicious. Never did get a bottle of wine with the poor service. Even the process of paying the bill had our waiter running off again in the middle of transaction. I expected similar service as Rosa Negra and Parole did not deliver.

My waiter was pretty good, pretty attentive, but it really wasn't busy at the time I went. I ordered the fettuccine Alfredo with tartufo, at the time I didn't realize it was mushroom, I thought it was something else, but it turned out to be OK. The sauce is not thick at all.... it's just kind of a buttery half-and-half sauce... so the sauce does not adhere to the noodles. I got one small piece of bread on the side, which actually turned out to be OK since it was pretty warm. The service was good, so it went up to 3, but the pasta dish was not really worth it.

To kill time, we sat at the bar and got a few drinks until our table was ready (which only took about 20-25 minutes). The ambiance inside feels very upscale and our waiter, Juan, was great the entire time and was very attentive. The only time he fell short was when he had forgotten our pizza order which we had to remind him about. Overall, the food was delicious at this all-inclusive resort. Being able to try various dishes made this pit spot at Nebbiolo well worth it. Now onto the food/drinks: - Virgin pina coladas (5/5): Refreshing and so good; I drank two virgin pinas but found that the third was possibly filled with rum. - Complimentary homemade focaccia (3/5): Leaned a bit salty before dipping with olive oil and balsamic vinaigrette and freshly grated parmesan. - Complimentary homemade onion croissant bread (5/5): Had a great balance of onion paired with a soft croissant-like texture. - Insalata di Carciofi (4/5): Good "heartiness" from the artichokes and carmelized onions balancing well with the raspberry vinaigrette and gorgonzola cheese. - Fruti di Mare (3/5): The calamari and shrimp were all seasoned the same. The calamari rings and shrimp were a solid 4/5 but the actual calamari strips tasted very salty (2/5) and the texture was very mushy. - Spaghetti de Carbonara (4/5): Perfect amount of pepper to salt ratio from the guanciale. The noodles were cooked to perfection and the serving size was just right. I would've wanted it to be slightly creamier. - Petto Alla Parmigiana (5/5): Crispy outer parmigiana layer filled with chicken and the perfect complement of truffle potato puree. - Pizza Boscaiola (1/5): Overly salty and inedible. The dough was fluffy in some areas but slightly undercooked in others. The toppings were sliding off and it was just hard to eat overall. - Tiramisu tart (2/5): This tart was not really reminiscent of traditional tiramisu in that the base filling was not smooth from the chocolate sable cookie. The saving grace to this dish was the cappuccino ice cream that I dipped into the lady finger cookie crumbs.
