Two words: Korean Wings. I found myself at Rayback today, knowing that I was going to eat from whichever truck was on site. Enter Passport Food Truck, a mobile kitchen specializing in worldly bites inspired by the owners' travels. Today's menu was leaning in the direction of Southeast Asia and the Mediterranean. Fine by me! I wasn't planning on having wings for lunch, but when I see them on a menu it's hard for me to resist. Plus, these were Korean wings with a gochujang glaze. Say less. Korean Wings ($12) // Fried wings tossed in spicy gochujang chili paste and orange glaze, topped with green onions and sesame seeds, served with kimchi aioli. These were crispy, sticky, and sweet with a little bit of heat. A hell of a mess to eat, but damn tasty. Five to an order, I could've had a few more. The dipping sauce was okay, would've preferred ranch personally. Owner/chef was super nice and working hard for the line of people. Not easy going it alone when you're the only food option for lunch. I immediately was drawn to this food truck due to the massive variety of options that they have. They have foods from many different countries and cultures. They had everything labeled very thoroughly, such as: price, where the food is from, and what ingredients. I feel that the thorough labeling is not seen as often at food trucks. They also had a large step at the window which was very inclusive for shorter individuals. Once I got up to the window, the owner was incredibly kind despite having many people in line. The wait was relatively long, but it was totally understandable due to the owner working alone. I got three different items and enjoyed all of them! I would love to see other options for sauces to be offered, but the affordable price softened that blow. Overall, it was a great experience and I would definitely come back. read more

When I went, there was only one man working the truck - he was very busy with a long line and many orders; however, even with a demanding line, he was extremely friendly and speedy getting my order out after it was placed. I ordered the falafel, and it was very good! The naan was a little over toasted, but the rest of it was excellent for food truck standards. While on a recent visit to Denver, I decided to check out Boulder for the day, and since it was close to lunch, I ended up at the Rayback Collection for beers and food. The place boasted of having food trucks, but upon arrival, there was only one. Luckily, this one was awesome! Passport definitely lived up to its name by having a small, but very eclectic menu that included vegetarian and meat dishes. The offerings ranged from Asian (veggie eggrolls, Korean fried cauliflower, Indian dal tadka) to European and North African with dishes as dolmas and North African Harissa Chicken. I really had a hard time only choosing one, but I really didn't want to walk out super bloated. For my order, I opted for the Porchetta Sandwich because the roasted pork belly sounded delish, but the lady in front of me ordered the last one. Not a problem since I had a second choice already in tow, and so, I opted for Chicken Báhn Mì. I forgot to take a pic, but it really was outstanding. For starters, they used dark meat chicken, which is always a plus in my book. The bread was a little crispy with a super soft middle, and the addition of jalapeños, mayo, and several crispy veggies made for a refreshing sandwich with a delicious amount of savory flavor. The cilantro added a hint of citrus, and the carrot and daikon radish created a crunchy texture that just added to the layers of flavor. On top of that, they were super nice! Customer service is always a huge factor for me, and they really delivered that with casual conversation and smiles that shown through their masked faces. Definitely a winner, and if I ever return to Boulder, I will definitely hit them up for a meal because I know it will be something creative, different, and full of flavor. read more

This is my first food truck I've tried in Boulder. It was at the Rayback Collective. That place has horrible parking, such tight spots. The place itself was cool though with the lights and all. Now onto the actual food truck. Not sure what the name of the lady was but she was definitely super cool and nice. The food was very diverse and interesting. I had a chicken satay with rice which costed about 7 bucks which isn't bad considering it's boulder. The portion was a bit smaller than what I am used to. I also had the korean wings. They were truly something. Not sure why they were so dark but the sauce was a bit salty for me. Overall it was okay but #kevinissad because of how small the portions are. read more
