I recently came to Main Street winery just for Pasta Mark. It was the night before my birthday and I wanted to try a few of his dishes. We were bummed that the lasagna ran out, but that's OK. Just give us another reason to come back. We went with the Bolognese and Lemon Ricotta ravioli with the Focaccia bread. Let me tell you that both dishes were incredible and the bread is divine. It has the best crunch on the outside but the inside melts in your mouth. The pasta was delicate but bursting with flavor, and not overtaking either. It's really nice to see Mark in his element, preparing each dish in house. Main Street winery offered an amazing selection of wine, including a zero proof that was amazing. *Review of Pasta Pop-Up* My friend James posted on IG about Chef Mark's pasta pop-up, where he pulls out fresh pasta sheets and makes delicious pasta dishes right in front of your eyes - in a parking lot in Huntington Beach. I knew I had to see (and try it) for myself so I made the trek to my old stomping grounds in HB (OVHS alum over here!). I showed up and waited behind a few others while Chef Mark meticulously doled out his pasta dishes by hand and served them up. I ended up being his last customer of the night as he pulled out his final sheet of pasta to make me two dishes - the agnolotti pasta & squash, and the Two Toned Ravioli. He topped both dishes off with a sprig of fresh basil from his garden and large Parmesan shavings that I will never say no to. I got the chance to chat a bit with Chef Mark as he wrapped up his service. By day, he works in LA but he loves pasta making and is a private chef as well. You can see the passion and I feel good supporting my local hometown chefs! He now has a residency on Tuesdays at Main Street Wine Co in HB, so if you want to be wowed with delicious pasta creations, stop by - or hire him for your next private event! First of all Mark is one of the kindest people of ever had the pleasure of meeting. He arranged to cook a last minute anniversary dinner and Hour and a half from where he was. He even brought my wife flowers and champagne. He then began hand rolling 3 different types of pasta with the love and care of an artist. He plated them better than any Michelin star restaurant . Best part is the pasta is better than anything I've tasted here or in Italy. I can't say enough nice things about this guy and his cooking. His pricing is incredible. We started with the pasta making tutorial, amazing as he made it stress free and fun! Dinner was DELICIOUS! Mark taught a cooking class for my daughter and her friends for her 11th birthday and it was a HUGE hit! The menu was very impressive - gnocchi, two types of ravioli, focaccia and salad - and he struck a balance between having the right amount prepped ahead of time and having plenty of hands on work for them to do!
