Perfectly cooked lamb, both sou vide and grilled. Accompaniments were delicious and the chilli hit of the perfect sauce made the dish sing. Hubby had the black pearl, love the theatre of it all...you sign a waiver and they present you with a tray of tissues, milk and vodka to ease the burn. The dish was beautifully presented. I managed 3 little tastes and my tummy burned for a long time after. Surprising, the flavors were excellent. Hubby ate most of it but he did suffer through it....definitely not for the faint hearted. I would be back often if I lived here! After dining at some of the worlds top rated restaurants...I can say that this is a true gem thay clearly has some mad genius at the helm, a person who understands delicate flavors and chilli and plates like a God. They provided pate and some bread "on the house" to start. I do not like pate so I didn't touch mine. The service was great overall. The puree on the plums were just overkill, the little cubes of pork lard were totally unnecessary in that puree. - Risotto: Nothing particularly special about this dish, not memorable. The bad: Beet soup: What I was looking forward to most. Thanks for not warning us there was a giant clump of wasabi in the soup, when my 11 year old ordered it. Maybe mention it before you serve that much spice to a kid. Even for me though- the horseradish was way too intense. My mom liked it, but myself and my dad preferred my mom's beet soup to this. Disappointing. Chicken: How do you mess up the chicken? Put a boring, undersalted overworked piece on a plate with some tarragon... something next to it, with cubes of pork lard. In an unappealing, mediocre sauce. Lack of texture, lack of seasoning, disappointing. The carrot side was also a miss- the puree itself was good, the pork lard cubes were not necessary. Overkill. The tartare: The meat itself? Fresh as could be. The lemon and mint jelly? Absolute overkill on the flavors. Not cohesive at all. Was it beautiful on the plate? Absolutely. We didn't get dessert because we were disappointed with the meal. The service wasn't great- they took my daughter's entire soup back and didn't ask if it was ok or inquire why the whole dish was left. They tried to take her chicken away before she even dug into a third of it.. and again with no curiosity as to why the whole dish was left. The amuse bouche was nice.. but overall this was disappointing and I won't be back. Don't overcomplicate the dishes, and it's a little eye-roll when you put pork lard cubes in so many dishes. First experience two years ago- and as I look through old photos too I remember how amazing it really was, was so much better than this last visit.

He left us and got busy with another party, which we understood, so waited for about 20 minutes. One of his colleagues passed by and we mentioned that we were waiting. We saw her tell our server, who still did not make time to check in with us. After waiting even longer, one member of our party--originally from England, which becomes important later--got up, found the server, and asked if we could get the dessert menu. Finally he came to our table. He did not apologize for the wait (all he needed to say was that he had gotten swamped, and we would have been fine with that small explanation). Instead, he said, "The hardest part is waiting," mentioned there is no actual dessert menu, then left and came back with a board showing us some of the desserts, explaining what they were. He was obviously irritated with us and so we opted to end the evening and asked for the check. He brought it quickly and pointedly explained that we could tip him. We were uninterested in rewarding his rudeness and did not tip him. Then he insultingly said to our English friend, who was paying: "I didn't think you had an American accent." This was so unprofessional. We go out of our way to be gracious when we travel, not wanting to be seen as "ugly Americans." We tip almost everyone and generously. Your server's increasing rudeness and growing irritation with us was completely uncalled for, and we are so disappointed to have this memory of an otherwise wonderful few days in your beautiful city.

After tastings, we chose a German white (that is a rarity), and an Austrian red. Seems there is a lot to learn! I had a grilled bass with potato and zucchini plus a light vegetable sauce.
