You walk to the serving line, hand the staff your paper and tell them what you want, then take your plate and paper somewhere to sit down and eat. When you walk in, you're given a paper slip for your order. First thing in line is soups. If you want one, you order and hand over your ticket so they can mark your order on it. Keep your ticket on you and you pay at a booth when you leave. I ordered a small borscht (all of the soups come in half and full sizes) and a pork dish with sauerkraut and dumplings.
