Not far out of Salzburg is countryside and pastoral is the setting for Pfefferschiff. It was July and the smell of freshly mowed,adjacent, pasture accompanied the warm greeting of the staff as they ushered us to our white cloaked table beneath large tan umbrellas. We were soon imbibing a yeasty obscure champagne and on OU r way to an unforgettable meal. The menu was grouped into three large prix fixed options with ala carte pricing for each course. The congenial, knowledgeable waiter easily accommodated mixing, eliminating, courses from one suggested menu to the next. We were four, and among us shared nearly every offering. We differed amiably about the most astounding dishes: goose liver disguised as an apricot, served with an apricot tastes, as it turns out, like the richest apricot ice cream ever! Sardine soup... spectacular; cherry soaked deer calf incredible (luscious, not sweet). An artichoke ravioli and Dover sole deftly filleted table side were main course favorites. A blueberry pancake desert narrowly edged out the Wachau apricot curd. Everything was so well prepared with fresh ingredients making great use of celery, green onions, and delectable mushrooms. The wine list so delighted our oenophile who shunned the ample nonAustrian options and dove into the extensive more local list. A splendid Gruner Veltliner and Blaufrankisch well accompanied our varied courses and the waiter precisely made the bottles serve we four for a 2.5 h meal (one need not experience so many courses).
