Fabulous Michelin rated restaurant in a winter sports mecca. We were passing through the Dolomites during the off-season and hoping to find a restaurant that served something other than pizza. Planning for this trip pre-Covid we spotted this as a possibility from Google. I contacted them a couple of months early, but they told me they weren't sure they would be open, but a few days before arrival I tried again and was rewarded with a reservation.
I'm sure that during the high season they are very busy, but during our visit the whole area was quiet with many of the hotels closed. Only a few tables were in use, but the food and service were first rate.
Our server not only took lots of time explaining the dishes but also offered really great wine pairings with our choices.
Of particular note was the attention to detail on both the appearance and the taste of every element of every dish.
The pictures tell the tale almost better than words. The amuse bouche had three small bites, each which was exciting. In particular the mushroom shaped crackers filled with soft and intensely mushroom flavored cream were beautiful to look at and delicious. The cheese spheres offered a particularly exciting combination of textures and taste.
My wife and I shared the fried asparagus appetizer. Each asparagus spear was half coated in a crunchy coating and half exposed. This was served with vegan mayonnaise, a soft poached egg, and baby kale. Great textural contrast from the naked to the fried ends of the spears nicely complemented by the egg and mayo combination.
I could go on, but by now you have the idea. This place demonstrates great culinary creativity, artistry, and attention to detail. Although certainly not in the budget category, for the quality of the food, the wine and the service the cost was very reasonable. We've paid far more for much worse meals.
