Not to be dramatic, but I would fight a bear to relive that moment. I'm not exaggerating. With that first bite, my soul briefly left my body. Angels wept. A single beam of light descended from the heavens and landed directly on my plate. Somewhere in the distance, a bald eagle screeched. I don't know who or what was in the back of that food truck cooking that sandwich, but I'm thinking it must have been God himself. I'm kicking myself for staying in the truck to be a passenger princess while my husband got out and ordered. Seriously guys, every bite made me weak in the knees--like, I had to steady myself against the table as I ate. My husband and I looked at each other dead in the eyes after the first bite, and we both just sat there in stunned silence, chewing like we were in the final scene of a romance movie. Im embarrassed to share the sounds we were making with every bite. Let's just say if someone had walked past us, they would've 100% assumed something deeply inappropriate was happening. Like, WHAT IS IN THIS FREAKING SANDWICH?! The crunch. The heat. The sauce. Omg the sauce. I will be dreaming about that sauce for the rest of my life. Now, I have to admit, as with all good things, there is also sorrow. And the sorrow hit hard. Because as I took my last bite of that heaven-sent sandwich, I realized: I will never again experience the first bite of that perfect sandwich ever again. Never. Sure, I can return every single day for the rest of my life, but that first moment. It's gone. And it's never coming back. But, as the wise once said, it's better to have loved and lost, than to have never loved at all. So do yourself a favor, go get this sandwich, and you can thank me later as you rise into the heavens with that first bite.

The wife and I had heard great things about it, so we took little trip. We arrived and perused the menu outside of the truck. A lot of delicious looking things on the menu. Burgers, birria tacos, yummy looking fries, lots of good stuff. Near the front of the truck a separate menu saying it was burger week, so we opted to try a burger. A friendly face, presumed to be the owner, greeted us and took our order. The wife ordered a single patty smash burger with all of the fixin's to include jalapeños for $15. I noticed a breakfast burger on the menu, so I inquired what was on it. One patty, cheese, a fried egg, bacon, and a hash brown patty. All of my favorite things on one burger. Also, for $16, that seemed like a good deal. In good time, we were summoned to the truck for our order. The fella who took my order informed me he had forgotten to let me know that a spicy strawberry jelly came on my burger as well and asked if that was ok. I am generally not a big fan of jelly, so I politely declined. Unfortunately, the burger was already made, so he requested the cook to remake the burger. Not wanting to wait for another burger I told them I would give it a try. He insisted remaking it would not be a problem, but I opted to try it anyhow. We strolled back to the house and got right to it. I grabbed my burger and forgot about the fried egg. The egg popped and seeped all on the plate before I got a bite. Whoops. Anyhow, the first few bites of my burger were delicious. Juicy, and seasoned very well. Bacon was cooked right and was not rubbery. The hash brown was also a great addition and tasty. About the third bite I got the strawberry jelly. The jelly was good, but it overpowered the burger. The sweetness distracted me from the juicy burger, and annoyed my tastebuds. I tried to scrape the jelly off of the burger, but the burger was saturated with it. I ate about half of the burger and gave up on it. My hands were also very sticky, so I had to stop eating it because it was just too much. I finished eating my fries and watched my wife finish her burger. To be fair, they did offer to remake it. So, the jelly fiasco is on me. I own up to that, and will not ding this review because of it. That being said, I cannot wait for them to visit my neighborhood again. I definitely will be having them again. The food was great, and I loved the whole food truck vibe. If you see this guy in your neighborhood, give them a try. Shop local, and keep these guys in business. Enjoy!

This particular Monday evening, I struck out at a couple of places, everything was closed. One of those moments where you realize, "You're exactly where you're supposed to be, even if you didn't plan on it." When I walked up, the young woman working was sitting and visiting with who I initially thought was family. I apologized for interrupting what I assumed was a family dinner, and she immediately explained they were regular customers and close friends, and that she'd be more than happy to help me. That set the tone right away. Tacos look a little different in North Carolina where I live, so I had questions. She never made me feel rushed or out of place. Instead, she pulled up photos, explained the menu, and walked me through the different meats and options. I ended up ordering a mix of five different tacos on both corn and flour tortillas, and decided to step outside my comfort zone with a couple of selections I don't usually try. She even gave me a heads up about the tripas, letting me know it had a different taste and that I might not like it. I've heard my Hispanic friends rave about it for years, so I took the gamble, and I'm glad I did. Everything was excellent. The customer service really stood out. I had ordered my food to go, and it was a cold night. I was only wearing a short sleeve shirt, and without hesitation she told me to go wait in my car, that it was too cold to stand outside, and that she would bring the food out to me. She genuinely wanted me to stay warm, and sure enough, she brought everything right out once it was ready. That small gesture made a big impression. I felt like a genuinely valued customer, almost like an extended family member rather than just someone passing through. Don't let the fact that this is a small food truck in a parking lot fool you. This is absolutely a place worth stopping for, and one you don't want to miss. It's now on my "must stop when I'm in the area" list. Thank you for a great meal and an even better experience.

I love that I can taste the meat; it's not super greasy either, but still flavorful and ready pretty quickly maybe 10 min wait. It's kinda tucked in a parking lot but plenty of space to park and if you want they have some tables out there. I usually grab it to go though, it's a nice little treat at a great price point.

Un Poco De Todo is really "all that and a bag of (tortilla) chips!" I told my husband today that that I was craving UPDT tacos so bad that I was willing to "saw my own arm off 127 hours later style" for a chance to get their tacos. I will name my first born child Un Poco De Todo. It will be my next tattoo. I have a UPDT shrine at my house dedicated to our savior the spicy taco. Ok, I got a little carried away at the end there. But seriously, we LOVE this taco truck!!!

We had plans to get dinner elsewhere. The food was pretty good and fried to the right amount...but our order took over 30 minutes to make. We had to visit the gals at the truck a few times to ask them if our order was done, or if we were forgotten. The sweet gal taking the orders also said that they would bring it out when it was ready, but we waited a solid 30 minutes and decided to ask. I think they just forgot our order of chips and queso and fried pickles. Besides that, the experience was great. Their chips are great (I love the thicker tortilla chips!) and have a more solid crunch to them. The queso is on the lighter and thinner consistency side, which is always a refreshing texture. They definitely use a lighter cheese instead of a dark cheddar, as shown through the color of the queso. It's got a great flavor to it too without having any extra add-ins. A nice traditional queso! The fried pickles were average, but my bf is obsessed with pickles...so that was his impulse buy. Not sure if I would say this is a steady food truck that I would come back to outside of the brewery, but I'm glad it's at Guadalupe! Good choice for snacks and probably their po boys!
