This is a 50 Best Discovery bar and one of my favorite bars I went to in Amsterdam!! The inside is not big but we went on a random Wednesday so we only had to wait a few minutes. The inside is so charming with many intricate details. There's a bar area and a small seating area towards the back. The menu is gorgeous and you can actually buy a copy of it. Tucked on an old canal in a historic inn, it feels less like a bar and more like a small salon devoted to Dutch drinking culture. The rooms read like a cabinet of curiosities: intimate, storyful, quietly romantic. The team centers Dutch spirits, especially genever, and treats the menu as a narrative rather than a list of brands. Seasonal themes frame the drinks by flavor profile and history, and even the snacks stay in character, with simple Dutch-leaning bites that support what's in the glass instead of competing with it. The craft is serious. Most of the cocktails look disarmingly plain in the glass. No umbrellas, no edible terrariums, no theatrics for their own sake. The also have a great hotel, The Ambience is chic And we felt like we were welcomed into the cool kids lounge. The secret entrance to the hotel made people look at you like how can I be that cool. I hate that I don't have photos of this bar or our drinks but this was my absolute favorite bar in Amsterdam! It's a speakeasy as special as they come. They also have a book of Fables with moveable cutouts/pop ups that make for fun drinking games AND they have drinks to go with said fables but you can tell the bar tenders about yourself and be pleasantly surprised with what they whip up too. Tiny speakeasy (yes, there's a doorbell!) specializing in craft cocktails. The ambiance is so warm and cozy, just right for a dark winter's night. The decor manages to be tasteful bordering on kitschy. My date thoughtfully made a reservation, and we had a beautiful couch area in the back of the bar to ourselves. Everyone who served us was observant, thoughtful, and warm. A nuanced detail that is rare in Amsterdam: they made sure to refill our water glasses promptly and throughout the night, and I really appreciated that. The central location lends itself as welcome a respite from the madness of the rest of the Centrum partying. It's the perfect place for something classic (what can I say I'm an old fashioned girl) or to try something invented by the knowledgeable bartender by suggesting the spirits and flavors that you like. Holy smokes! This bar was seriously one of the best I've been to in my life! I saw the Yelp five stars when I recently visited Amsterdam and was intrigued. My group and I showed up unannounced and rang their bell to be let inside. We were sad to hear that we couldn't enter without a reservation but we checked and saw that they had an opening for the next day so we booked it! When I say we booked it, I mean there is a 10€ deposit per person in order to book a reservation. This money is then applied to your final balance. I loved the sleek speakeasy feel of this bar. The staff were all friendly and talented. The selection was off the chart! I say this because I was able to enjoy Pappy Van Winkle 12 AND 23! The bourbon selection was magnificent. They also had a great selection of bar food that complimented the drinks. I cannot speak highly enough of this spot and I recommend you check it out without delay! read more

Walking by on the street and the warm, amber colored lights caught my attention. I peered in the window and I was so pleased to see ... a BAR! Sharp dressed bartender and a host welcomed us in with VERY friendly smile. Luckily there was one table left. I think I would have been heart broken if I could not have sampled the work of these fine gentlemen. We were shown a comfortable spot in the back but that makes it sound big ... it is not. Maybe 8 small tables and few seats at the bar. The menu had Dutch inspired cocktails so we proceeded to let our host drive us to a decision. My girlfriend selected a tart, vodka based drink that looked close to cosmopolitan but had more lemon aftertaste and a pretty egg white foam and a tiny edible flower on top. Super happy we stumbled into this little place during our short stay in Amsterdam. I guess this would technically be classified as a hotel bar as the rest of the building functions as a tiny boutique hotel (will look to stay there on our next visit. All around a great find. The long and short of it: 1. Drinks: Fancy, expertly crafted and most importantly delicious. With a wide selection of liquors, we opted to stick to the cocktail list. Everything we had was delicious, though their menu changes seasonally. Dont be afraid to go outside your cocktail comfort zone, and also drink Jenever. 2. Staff: The 2 wonderful people that helped us out on our first night in Amsterdam were Emily and Lucas. Their cocktail knowledge and skilled drink craftsmanship aside..... they simply couldn't have been more welcoming or warm, and that means plenty to a couple of tired people who just hopped off a plane a few hours ago. They took the experience to another level and are a large reason why our evening there will always be such a fond memory. 3. Jenever: I casually mentioned to Lucas that I had never tried Jenever and I was interested in sampling some while we were in the city and I would possibly bring a bottle home. What happened next was a whirlwind of information (historical and current), tasting, pairing and some other things I can't remember I'm sure (not helped by said Jenever). The takeaway is that Lucas knows his stuff and is more than happy to enthusiastically impart his knowledge to even a newbie like me. Fun and informative, also boozy! 4. Food: Rosalia's Menagerie offers bar bites and snacks while you order one too many drinks. We didn't end up ordering any, but the couple next to us ended the night with a few bitterballen that looked and smelled tasty. Always nice to have when the snack desire strikes. We popped in for a quick after-dinner drink and ended up staying until closing because we enjoyed Rosalia's Menagerie so much. We plan on returning to Amsterdam in the near future, so we 100% plan on returning to this gem of a spot. Overall Grade: A read more

This was truly an experience like none other. My partner and I were walking through Amsterdam and happened upon this cocktail bar almost by accident. It turned out to be a truly unforgettable experience. All of the drinks are described according to flavor instead of a list of ingredients. This allowed us to genuinely choose a drink that we knew we would love. Lucas waited on us and was absolutely astounding. His knowledge of the menu and of the individual ingredients in each drink was a treasure. Being from the states, my partner and I had no idea that Jenever (a dutch gin that predicated the English's juniper-forward gin) existed. One of the drinks we ordered was an old fashioned, which we're accustomed to drinking with whiskey. This old fashioned, however, was made with new age Jenever, and was incredible. Lucas allowed us to taste both the new and old age Jenever gins and educated us about their origin. Rosalia's Menagerie was easily the best part of my trip to Amsterdam two weeks ago. After a tough Sunday night, trying to track down a nice cocktail bar to wind down in, my boyfriend found Rosalia's online, and off we went. We walked in from the pouring rain, and the service could not have been more impeccable. We were so warmly greeted. We were seated at a table with the comfiest couches. I loved the intimate, cozy feeling of this place. My boyfriend started with a "jenever flight", which he very much enjoyed. The owner, Rachel, was so incredibly knowledgeable and wonderful! I loved speaking with her all night! I started with the "Titania," which was light and refreshing. I then decided to have something a bit more decadent and went with the "Floating Island," which was the greatest cocktail I have ever had the pleasure of enjoying. The bartender, Lucas, was remarkable. I can't wait to return every single time I come back to Amsterdam. I would give this spot 2 million stars if I could! Absolutely the best. read more
