It was founded by husband and wife Tim Balshi and Soraya Aguilar. The couple first began importing olive oil to the United States in 1999, driving between Maine and Virginia in their old Chevrolet. Aguilar grew up on her family's third-generation olive farm in Jaen, Spain. Jaen is located in a region called Andalusia, which produces 80% of Spain's olive oil. The couple decided to found their own brand, Seasons, in 2009. Their mission was to provide customers with healthy, plant-based, all-natural, everyday luxury olive oils and vinegars that empower home cooks and elevate every type of cuisine. Their first brick & mortar storefront and taproom opened in Bethlehem the following year. Following the success of the original location, additional taprooms opened in Lancaster as well as Anapolis (MD). Additional storefronts (without the taproom element) also opened in Hershey, Wayne, and Easton. My family and I visited Seasons Bethlehem over the summer while we were visiting relatives in the area. We were exploring Main Street in Downtown Bethlehem and happened to walk by the storefront. My wife and I love exploring shops that sell gourmet oils and vinegars, so we decided to stop in. They had so many different types of oils and vinegars to try out. In addition to oils and vinegars, they also sell gourmet olives, pastas, syrups, honey, and various types of crackers. We had trouble deciding what to purchase, but finally chose to bring home some Italian Fig Balsamic Vinegar as well as some Honey Hot Sauce. We're so happy to have accidentally discovered Seasons and we hope to return on our next visit to Bethlehem!

I put some spicy jelly in it and it had a kick to it but not that harsh. My sister had the vermicelli with shrimp and my BIL had the 4 protein Pho. They both enjoyed their meals. We also had the chicken satay and it did not disappoint. Don't sleep on the Vietnamese Black coffee. Better than any American coffee out there. Very rich flavor. Very authentic. Pho broth is spot on. Flavorful but not heavily seasoned or sweet. Noodles were perfectly cooked. The only thing missing is tripe! The bahn mi had perfect amount of cold cut to pate ratio and the bread was the right amount of soft/chewy. The wings were tasty too, cooked perfectly and not dry which is rare for wings in an Asian restaurant if you know what I mean. Overall such a great spot. I went to Macy's the other day and they were selling the 2lb bag for $30! Like maybe we should start setting the U.S. dollar on the jelly belly standard. But I digress. As I was making my way around the back to the entrance, a woman was on her way out (owner or wife of owner) and asked if me if I was lost (not in a bad way). Once I told her I wanted to buy some spices she was very nice in explaining to me they do not sell anything except wholesale. I ended up going somewhere else. But I did find out that Elias Farmers Market on Front & Tilghman St. actually sells Olive Tree spices and they are very cheap. Quality is not the best I have ever used but TBH if you use spices regularly it won't make that much of a difference if you toast them up before grinding or warm up the ground spices before using. FYI if you've seen/heard that caraway seeds help with bloating and was wondering where to get some, Elias has them (Olive Tree Spices brand) and it's only about $6.xx for a big bottle (size of big McCormick spice bottles from big box store).
