Senorita's Sisig Bar is a mainstay at the Sugbo Mercado and although it be but a small booth among many, it be mighty! They were serving 5 different types of sisig on our visit -- the traditional pork, beef, chicken, squid, and "seafood". They have the skillets as you walk by, the aromas of brainy, meaty bits casually flowing out to passerby's. The bowl you receive could be considered "snack-sized" and at P90 for the traditional meats, with the seafood fluttering just above P100, this bowl is such a tasty bargain. I've never had beef sisig, so that's what I went for while my friend went for the pork. The beef did have extra pieces of veggies in it. Both meats were seasoned and marinated well, that prominent citrusy-sour flavor made possible by a heavy dose of calamansi. The meat wasn't extraordinary in size, nor was it crunchy or sizzling, but the combined ingredients -- along with the rice and gooey egg added on top -- made for a delicious bowl. While this bowl did fill us up, again, it does fit into the palm of my hand, so maybe that portion size could enable you to sample other delicacies from the many booths sprinkled throughout the mercado. read more
