You're given a score sheet, a small guillotine slicer, and a lineup of six cheeses--ranging from younger Wyngaard varieties to their heavily aged Reypenaer VSOP and XO Reserve (which has those nice, crunchy protein crystals). Each sample is paired with a wine or port and a bit of specialty mustard. The staff is knowledgeable and keeps things moving at a good pace, explaining how the natural aging process in their historic Woerden warehouse shapes the flavor. The shop upstairs carries all the cheeses from the tasting, along with slicers and accessories if you want to pick something up on your way out. It's an informative, well-organized hour that gives you a genuine appreciation for artisan Dutch cheese.

They have a great selection ranging from young to aged Goudas, plus a neat little educational display showing traditional Dutch cheese making. If you're in Amsterdam, do not skip the Henri Willig Cheese Farm Store on Haringpakkerssteeg. Just be prepared to leave with a much lighter wallet and a heavy bag of cheese.

If I had to choose a flavored cheese, I would choose truffle. However, some of the more interesting flavors here were coconut, asparagus, lavender, beer, and smoked goat cheese. The cheeses surprisingly did taste like their labeled flavors...in a non-weird way too. Many people buy their gift sets. The unique flavors do make great gifts. Just be sure to buy the hard cheeses to carry on for long-haul flights as the soft cheeses would spoil quickly over time.
