The slices were very lean with almost no visible fat, no smoke ring, no pink, just gray-brown throughout. The bark was minimal and patchy. It looked dry before I even took a bite, and it ate exactly how it looked. The meat was firm, tight-grained, and lacked moisture. I ended up having to drink water between bites and could only finish about half before taking the rest home. The burnt ends weren't much better. They were dark and sauced on the outside, but they also leaned dry instead of tender and juicy. Not the rich, sticky, melt-in-your-mouth burnt ends I was hoping for. I got baked beans and potato salad for sides. I'm not sure if they make them in-house or if they're premade, but they were decent. Not amazing, not bad. They just didn't make up for the meat. I really wanted to like this place, especially after they recommended the burnt ends so confidently.
