Great local bar and grill. Rotating selection of drinks, food rotates seasonally. Fantastic service, very customer focused.

This is important to note for reasons unknown. Once underground your modern-day dress almost felt out of place and more akin to an Evelyn Waugh novel. Perhaps you'd be sitting across from a Mitford sister, or some other Bright Young Thing. It all felt a little bit Midnight In Paris when Woody Allen's script sends Owen Wilson's character back to the roaring days of Hemingway. The Walrus Bar (you'll have to visit to answer the question, "Why Walrus?"), headed by Krystal Hart (recently crowned Diageo Reserve World Class Bartender for 2013) and with support behind the bar from some of this town's finest (including a few familiar faces from Canvas), is home to some 300 spirits; rum; cheese and charcuterie and 30 Cuban cigars. As well as my usual cocktail friend (Southsides), I happily sipped on an Indian punch (Panch Phora Punch) which was a rich and seductively easy to drink. This is a rum bar primarily and the majority of lighting within the bar is from the glass cabinets containing every rum you could imagine. Of course, it is never wise to enjoy such decadent drink on an empty stomach and The Walrus have you sorted with a menu of small plates. The Walrus Bar has to be seen to be believed so rather than me waffle on any further - just visit this underground lair which you'll forget resides underneath The Regatta.

My friend and I went up to the bar and ordered cocktails there. I ordered the signature lychee martini, because, well, I FREAKING LOVE LYCHEE. The cocktail is on the small side, but quality over quantity people. A cocktail will set you back $17. With my drink came two large lychee fruit on a stick; but when I bit into one, it was frozen! Maybe it's because lychees aren't in season, or it's meant to be like 'ice'.... Not sure, but fresh unfrozen lychees would have been nice! I definitely want to come back and try different cocktails and some food.

They were having a bartender cocktail making competition so the night was probably a bit different than most. I totally agree with Corrie because the Pavlova cocktail was the BEST! I should have just ordered those all night instead of trying out other cocktails because none of them lived up to PC (Not. Even. Close.). We enjoyed our tapas and they came out in a timely fashion. The sliders were tasty! I believe the menu changes weekly. I would have liked for the service to be better. We ended up going to the bar every time we wanted to order something which is a bit inconvenient. There was an event so I will say that was the excuse. All in all, so glad I came and would so come back with my girlfriends!

I think it's just that it reminded me of Bourbon and Branch in San Francisco, which takes on a speakeasy atmosphere and serves amazing cocktails and drinks. When I was there, they had a band, which was a bit loud for how big the place was, but it was fitting for the atmosphere. The drinks don't come cheap (about $20 a pop) and isn't much of a party atmosphere, nor is it good for dancing, but it's definitely a casual classic bar for a close group of friends.

I agree with all the reviews that there is no place to dance but the music is great and makes you want to dance. In addition, I waited ages for drinks and then on my way back to the table, other patrons ran straight into me knocking 1/2 of the concoctions out of the glasses. :( I basically paid for 4 drinks and ended up having 2.5 drinks to give to my friends. That's really terrible. If they could expand the space between the bar and the benches, everyone would be a lot happier. If you can find a booth or seat to chat with friends, it's great but if not, making space can be a bit tricky. I like it but I don't think it's my go-to in the Valley especially after my last experience.

It's such a beautiful space, from the 7.5m brass bar, custom glazed porcelain lights, back lit shelves, & a charcuterie cabinet at the end of the bar (which will form the basis for a very simple menu in the coming weeks). Maker's menu has a strong focus on Australian wines, beer, and spirits; with the sophisticated cocktail menu an adventurous interplay of flavours, like nothing you'll find anywhere else in Brisbane.Prepared with flair, artistry, & unique techniques, having a cocktail at Maker is a feast for the senses. Try the "Whisky Wax Coffee", a combination of Whisky, coffee, beeswax, pollen, macadmia ($22), and watch how it's prepared. Served in artisan glassware with sphere ice-cubes, & some of the famous black garlic bread from Gauge. We also tried the Starward (Australian) whisky as well as another cocktail not on the menu. It's one of the main benefits of being in such a small bar, that one can have meaningful conversations with the bartender, request a cocktail based on your particular flavours, adding to the overall bespoke experience. Maker has arrived, and it is a game changer.
