They have all the standard items you would expect from ayce sushi. But, they have many specialty items not usually seen! For example, I really enjoyed the tako wasa, okonomiyaki, kushiage (esp the quail egg), and the pressed sushis. The tatakis are a must-try too, imo. The most important part of ayce sushi is the sashimi, and it was very fresh and tasty when I went. Next, the service was fast and accurate. Of course, they've just opened so it wasn't too busy. It was still really surprising to see how fast food arrived once I sent the order to the kitchen. They give you a QR code and you order through your phone. The one major drawback is the price. Dinner for one is $40. I think the meal is definitely worth the money. But compared to other cheaper, lower quality ayce sushi, Samon doesn't really stand apart on a "whole new level" as one might expect.
