I'm from the US, so the sushi quality and prices can vary greatly here. I thought it would be even more so in Florianopolis, but was happy to find Sushi Yama. The fish quality was good and the prices on northeastern US budget were great.
We went for the sushi buffet (minus the sashimi which is R$20 more). The selection was decent although it seemed to be a bit salmon-heavy. There were plenty of maki and nigiri to chose from, as well as cucumber and seaweed salads, miso soup, and a few other standard sushi bar mainstays. It all seemed fresh to me although the sushi offerings were on the small side. We didn't order al la carte off the menu but I would imagine the sushi would be much the same, only larger.
The decor is a nice mix of standard sushi bar and comfortable Brazilian style. There were quite a few tables in multiple rooms although they get busy on the weekend. Service was reasonably attentive (as much as it can be in Brazil) and the drinks were fairly priced. Overall, we enjoyed ourselves at Sushi Yama: There was enough at the sushi buffet to keep us happy, and when the bill arrived, we were even happier.
