That is how we ended up ordering the Popper Topper Burger at Soho American Kitchen & Bar in Sioux City. We began sensibly enough with the Prime Rib Burger. It was a very good burger--rich, satisfying, and substantial enough to remind you that a cow made a serious commitment to your day. I would absolutely order it again, although next time I'd add lettuce, tomato, and the rest of the fixins. It needed a little freshness to break up all that savory richness and help me maintain the illusion that I was eating a balanced meal. Then we turned our attention to the Popper Topper. The cream cheese didn't concern us. Cream cheese has proven itself useful in enough situations that it has earned the benefit of the doubt. The grape jelly, however, raised questions. Grape jelly belongs on toast. It belongs on peanut butter sandwiches. It belongs on the breakfast table beside a butter knife that is somehow already sticky. Does it belong on a hamburger? Our server, Allie, told us the Popper Topper was popular. Allie seemed trustworthy, competent, and unlikely to participate in a coordinated effort to trick strangers into eating jelly-covered beef, so we ordered it. It was fantastic. I don't know what kind of culinary diplomacy took place between the burger, cream cheese, jalapeño flavors, and grape jelly, but somehow these ingredients put aside their differences and formed a highly effective coalition. The sweetness, creaminess, savoriness, and touch of heat worked together beautifully. Of the two burgers, the strange one won--and it wasn't particularly close. The sides continued the adventure. The regular fries reminded me of those crunchy French-fried potato straw thingies we ate as kids. I don't know their proper name, and I'm not convinced anyone does, but these were like the grown-up restaurant version: familiar, unique, and very good. The kettle chips were also good, although they had the misfortune of sharing a table with the sweet potato fries. Those sweet potato fries were the star of the sides. They were sweet, but not dessert sweet; seasoned, but not "someone dropped the seasoning container" seasoned; and cooked exactly right. They also had a robust, filling body to them. These were not frail little orange shoelaces scattered around the plate as decoration. These fries had substance. These fries had confidence. These fries may have had a retirement plan. And then there was Allie. Allie didn't write down our order. This is always an impressive and slightly terrifying move. Whenever a server does this, I immediately begin preparing myself to receive someone else's salad and a beverage I've never heard of. But everything arrived exactly as we ordered it. She kept our drinks filled without ever making us search the room and attempt increasingly desperate eye contact. She was attentive without hovering, friendly without being forced, and efficient without ever making us feel rushed. Allie was simply outstanding--the kind of server who makes the entire meal better and sets the standard everyone else should be trying to reach. The restaurant itself had a cozy atmosphere, with dark colors and just enough lighting to feel warm and comfortable. It was pleasantly dim, not "Did we just enter a vampire's basement?" dim. By the end of the meal, we had enjoyed two good burgers, discovered that grape jelly is apparently capable of far more than we had given it credit for, eaten some excellent sides, and received exceptional service. It was a great experience, and we would absolutely return.
