Stopped by Bootstrap in Longmont for a cold beer on Cinco de Mayo and was pleasantly surprised to see a taco food truck. Even better was the fact that these are some of the best tacos we have had and we have had a lot. They are traditional authentic simple tacos. I had the "non meat" tacos with beans and avocado.
