Plaza Del Sol is in a strip mall/shopping center, and it's fairly unassuming from the outside…read more Inside is full of vibrant colors and murals. The service was quick and so chatty. There was always someone within three paces of our table, and the food came out so quickly. Chips, salsa and bean dip showed up (all warm and tasty). We ordered waters, tea, and a Dos Equis ambar and then took a look at the menu. As is usual with a Mexican restaurant, there are so, so many options. This menu had many of the regular options that people are familiar with, but there were a lot of other choices as well. I usually try to order something unique to the restaurant if I can. My only disappointment was I didn't see tamales or chile rellenos as an option. In the end I asked the waiter what he thought was the best dish, and then I ordered that. Unfortunately, I don't know what the "name" of it was on the menu. It was a half rack of baby-back ribs on a salad bed with a red sauce over top. The sauce was not like an enchilada or mole. I would say it was more akin to a thin salsa. The ribs were slow cooked and so tender. They tasted nothing like traditional american ribs but were really good. My dish came with beans and spanish rice. The beans were typical, kinda soupy with cheese on top. Nothing "extra" in either direction. The rice was pale, but the flavor was top notch. My wife ordered a fajita plate which had a bit of everything on it, steak, shrimp, chicken, etc. Her meal came with beans and a typical mexican salad. The fajita filling was excellent! Both meals came with hot tortillas to aid in the scooping and general enjoyment. I would definitely come back to this place.
