Outstanding. You know how really good food helps make for a good party? Or how sub par food can take away from it? That's why it's so important to get this guy. Fred does it all. And he does it well. Dude did his time cooking in Vegas, so he knows a ton of flavor profiles for dishes, sauces, and some secret combinations he has yet to share with yours truly. And I've been fortunate to be at enough events to tell he can flat out cook. Period. He's perfected this chimichurri blend that has the consistency and look of pesto, has this wonderfully garlic flavor, and really gives whatever carne asada dish he's making zing. I was partly reluctant to write this review because Fred's tacos were so AMAZING I wanted to keep them ALL TO MYSELF. But the world is better when we share the tacos =) So let me start by saying these were not some basic ground beef tacos. Fred offers a unique menu of delicious, mouthwatering Filipino inspired tacos. They were so good we tried recreating them for weeks after our event -- not even close. Whatever Fred's recipe, those are super flavorful, one of a kind tacos! We had Fred at our son's fifth birthday party, and his taco stand service was phenomenal. Pricing was reasonable, communication excellent, set-up all included, and Fred is just an all around professional and great guy. Saved us a lot of stress in ordering/catering food for our large party. We just had Fred as the main attraction and supplemented with side dishes, fruits, desserts, etc. At the end of his service, he cooked all the remaining food, and we had some delicious leftovers for later in the evening. He came on time to set up his booth and even with some hard weather conditions, he adapted. He had 3 different filipino meat tacos (steak, chicken, pork) with some unique Filipino-inspired toppings including cuchara, avocado, diced onions, cilantro, radish, lettuce, and 3 types of salsa...to name a few. Frederick is amazing!! We had him cater our wedding this past weekend. He was one of the highlights of our reception. We had a traditional wedding feast set up inside the banquet hall, and Frederick was an additional option for our guests. And he was by far the most popular item there. All our guests were raving about the tacos. All of the meats were marinated so well. Cooked to perfection. (Plus the quesadilla's If you want vegetarian option.) Super helpful from beginning to end, Frederick kept us informed and answered questions in such a timely manner. She was hesitant in sending him text messages, but he insisted on this form of communication. When it came to the day, he came early to find a good spot to set up and was super polite. We found Fred on-line and were intrigued by his Filipino inspired taco menu and decided to take a leap of faith and book him without a pre tasting for our daughter's graduation party in Sacramento. Fred is ridiculous. A friend of mine hired him for his wedding party and I'm not exaggerating when I tell you every one of the 60 people at the party saw him for at least thirds. Frederick is the best to work with. Not only is his taco trio so delicious and flavorful but he is so considerate and catered to all our guest at our wedding of 180 people. He set up an hour after the dinner and served our guest till midnight. With his tacos accompanying our open bar the wedding was lit! He even had made to order quesadillas for them.
