I requested a quote for a personal chef to come out and cook brunch for a group of us while we were visiting Miami. From the first point of contact, Chef Paul was nothing short of Excellent! The chef was wasted and couldn't even hold himself up. The bartender didn't know how to bartend at all. The food came out TWOO hours late. It was also cold and bland. I did a ton of research looking for the perfect catering company for my wedding and after communicating with several of them, choosing The Dancing Palate for our big day seemed like a no-brainer and fortunately they ended up exceeding our expectations. First of all, Paul is a super easy going guy who is highly responsive and an undeniably skilled chef. He was a pleasure to work with from the first communication and made me feel at ease about the whole process. We decided to go with a brunch reception for our wedding and were impressed by the brunch menu selections available on The Dancing Palate's website. As if that weren't enough, Paul made it clear that he was open to suggestions and that we could basically design our own custom menu if we wanted to. After speaking to Paul about our needs, we set up a tasting before the event. He came to our home and cooked up the most delicious samples of the foods we were interested in. Everything was made to perfection and we knew then beyond a shadow of a doubt that he was the right one for the job. We chose our menu and booked him for our big day without any hesitation. On the day of our wedding, Paul arrived early with his team and began setting up. They provided the tables, chairs, linens, and utensils for our event and had our venue looking fabulous within minutes of their arrival. They worked diligently in the kitchen and had the place smelling like a five-star restaurant. I heard multiple guests comment on how good everything smelled and everybody's appetite was eager for a bite of that delicious food. Once the servers began bringing out the appetizers and then serving the main dishes, it was easy to see why they call themselves The Dancing Palate because everybody's palate was doing a happy dance. Our guests happily gobbled down their food and loved every bite. The unlimited mimosas were awesome too and the servers were always around to pour refills as needed. The kitchen in the venue we rented was small and had its limits but Paul and his team never let that get in their way. Everything about the catering was perfect. Afterwards, Paul and his team cleaned the kitchen even better than the cleaning lady who had cleaned it before they got there. Despite a shortage of garbage bags in the house, they took all of their trash with them and left the place spotless. There were absolutely no cons about Paul or his team of awesome service professionals. It was fantastic from start to finish. It was reasonably priced and easily worth every penny and then some. I wanted to do something unique for my best friends bachelorette party and since we had 18 girls, I thought a private chef would be awesome. Paul and his staff were amazing! From the beginning he was very assuring that our meal was going to be delicious and that he would be willing to accommodate such a large party. I have to say, Paul accommodate every single allergy our large group had including two people who were strictly gluten free. I was very impressed. The cool part is that we could have created any kind of menu we would want and it was responsibly priced for 18 girls! We created a Mexican and Colombian themed menu that was delicious. First we had 3 appetizers that were laid out on a huge platter: margarita quesadillas, taquitos, and mini fish tacos. All were delicious and served with fresh pico de gallo. The for our entry, we had a authentic Colombian chicken dish and a piece of grouper. Both entrees are great! The best part was desert! It was sort of like a fried tortilla with tequila infused peach and apple inside with vanilla ice cream and whip cream. It was to die for and I wish I could have had more servings. So apparently a good personal chef is hard to come by in Miami. I met with a few others before choosing to go with Paul (executive chef at dancing palate). I needed someone to cook for my girlfriend and I as it was our anniversary. And considering she and I have eaten in quite literally 90% of the restaurants in the city, I needed someone that was going to impress. Dancing Palate certainly did not fall short! Paul took the time in our first meeting to help me construct a menu that was going to render us motionless... and it certainly did just that. We hadn't planned on a very large menu, but he had so many interesting offerings that I had to try more than just a couple. The great part is however, that anything you want you can suggest. If it's something they've never done before (good luck finding something), they will try it beforehand and MAKE it work. The "evening of" was perfect. Went off without a hitch! Dinner was served promptly as promised and everything was cleaned up and leftovers packed away (and there were lots of those). They rationed the food as if we were at war or perhaps in Cuba, after all it was Miami. Sadly, the food was equally disappointing. The paella was no more than a yellow rice with a few shrimp, slivers of chorizo and fewer calamari rings. It lacked flavor and was colorless and uninspiring. The chicken fricassee was a little better. The bread rolls were doughy and cold. Lastly, the servers were not friendly and seemed bothered when asked for any of the many things they were not tending to. I have attended many weddings and have never felt a need to review anything; in this case, I felt it important, not only to review but to warm others to not use these caterers. I hired The Dancing Palate for a 3 course dinner party at my house. Communicating and planning with the Chef was easy. The day of he was 30 minutes late but got right to work. He started with a passed feta and spinach stuff mushroom which was excellent. I felt that the first course (spring green salad with olives, spicy pecans, goat cheese and granny smith apples) was under dressed. But the components were all delicious. People especially liked the pecans The second course (filet mignon, butternut squash risotto, bacon wrapped asparagus) was a problem. Everyone's steaks were fairly underdone. The woman next to me didn't eat hardly any of hers because it was so rare. All the steaks had a piece of bacon wrapped around them which I wasn't expecting and the bacon was extremely underdone. No one ate it. The risotto was also very underdone and mine was cold. I didn't complain at all to the chef because frankly I didn't think there was anything we could do without removing all 10 plates, re-cooking everything individually so no ones food was mixed and then cleaning plates and re-serving which I thought would be too problematic. And then I wanted to enjoy myself and my guests so I didn't speak to the chef about it before he left. Dessert (truffles with raspberries and a raspberry reduction) was delicious. It was supposed to have fresh raspberries which it didn't but everyone loved the taste. Catherine, the server, could have been better. She spilled wine with every pour. The red wine spills on the table cloth and runner were less annoying than the 2 drops she spilled on my white rug. But scrubbing them with a carpet cleaner they did clean up. She seemed shy and uncomfortable and not confident. Our guests stayed drinking and hanging out until almost midnight so my husband and I went straight to bed when everyone left and didn't even touch the kitchen or dining room. When we came downstairs to the kitchen the next morning we realized that one of the gas cooktop burners was on. It was on all night long. Myself, my husband and our 2 kids slept in a house with a gas burner on all night. We're incredibly thankful that nothing happened but that's a huge mistake. It was the rear center burner which is a low simmer burner so it's such a low flame I think the chef didn't even notice but he should have checked everything was off before he left. It literally could have burned the house down with us in it. Based on this experience I can't recommend them. We certainly won't be using them again. read more

Catered food for a surprise party with Paul and his team, not only was he super quick in communicating, unlike other caterers, I felt he cared about the party as much as I did. When he came to deliver the food he was on time and did everything so fast and nicely that I didn't have to worry about a thing. They even prepped my oven so I don't need to stress about anything. I hired Paul and The Dancing Palate for my wedding on November 20, 2015. Paul was wonderful from the start. We had a tasting right away and it went wonderfully. I had contact more than half a dozen caterers but couldn't get them to be as flexible as Paul was especially for the price. The Dancing Palate is a fantastic value. The food was served on time, warm, and I got many compliments after the wedding. We had 135 guests and a 90 minute sit down dinner. I wanted family style with items served in bowls and sharing, yet sit down at the same time. I didn't find many caterers that would do that, but Paul understood me and it was perfect.
