Located in a commercial area in Mira Mesa/Miramar Area. The Knife Merchant has all your kitchen knife needs on display. Their wall of knives showcases Japanese and Western knives ranging from affordable everyday knives to ones that will set you back a few hundred for professionals and connoisseurs. And I was told they have many more in stock that aren't showcased that they can get for you. It certainly seems to be the case. As always, I'm a fan of local places that allow me to reuse and keep my items for longer and with their sharpening service I can do just that. The service is very affordable considering the price of a decent chef's knife will run you 50+ and even with proper maintenance it will get dull eventually. $5 for machine sharpening and $10 for hand sharpening as of this writing. Do yourself a favor and splurge for some nicer knives and get them sharpened so you can keep them for life. They weren't able to help me with repairing my chipped ceramic knife instead recommending sending it back to the manufacturing as it requires special equipment. Not their fault at all and just reinforces my preference for traditional steel knives versus this trend towards ceramic. My only wish was if their hours were just a bit longer to accommodate drop off and pick up. 9-5 M-F is both a bit too late and too early with no weekend days to drop off. Good thing I'm close enough to make a quick lunch errand of it! read more

Came in November in search for a chef knife for my boyfriend's Christmas present. As a clueless girlfriend of knives, I of course needed help. Chris helped me when I arrived. He was super nice and was knowledgeable towards their products. He originally gave me recommendations on Japanese knives but I ended up telling him that I was leaning more towards a German line. He gave me two recommendations of the Wusthof line. Had to ponder on which one to get. Ended up deciding to get the Wusthof Ikon 9606 set. Found a price that was cheaper online and Meghan helped me with honoring the cheaper price. God bless her soul with answering all of my pestering, constant and consecutive emails! She was patient, very quick to respond and also super nice! In addition to honoring the price match, she honored the 10% discount for first time customers before I even made a review on yelp (told her I was scared of my boyfriend seeing my review (if he did come across it before he opened his gift)). So I ended up getting the knife set at a really good price!! I promised her that I'd write my review after he opened his gift, so here I am writing my very first review EVER on yelp! My boyfriend was super surprised and he absolutely LOVED his gift! He's really excited to use his new knives. After a year of heavy use, I guess I became too comfortable with my Kyocera ceramic knives as I cut into a frozen banana with one and broke a 1/4" chip out of it. Knowing that all the knives probably needed to be sharpened anyway, I searched for a place that could sharpen but also possibly repair the broken knife. Not completely to my surprise, very few folks said they could sharpen ceramic knives. I got about 4 "No's" before getting an ecstatic "Yes!" from Knife Merchant. I went in that day and had the best experience working with David, Meghan, and another gal whose name I am sorry to have forgotten. Within 10 minutes, my knives were all sharpened and the damaged knife packaged up to send back to Kyocera since Kyocera apparently has a really good policy about repair/replace. It took a coupe of weeks but I just opened a brand new Santoku knife straight from Kyocera. I am guessing the damage was too bad to repair but I've got my amazing knife back. I HIGHLY recommend this shop for all your knife needs. They are very professional, incredibly kind, and know exactly what your knives need. Can't say enough good things about them! read more

Now, as soon as I walked in, I was greeted by a friendly staff member and she was very helpful with me trying to decide on what knives I wanted. She gave me many options to accommodate my needs, and in the end, I decided on the Shun Premier knives. Yes, They Impressed me enough to create a Yelp account and post a review. I have a 3 set of Messermeister knives I bought about 6-7 years ago (when I had no clue how to take care of my knives) and have never had them sharpened. they got so dull it made life in the kitchen fun no longer... so I looked up places to get them sharpened. Most places told me it would be a 24hr turn around... then I called The Knife Merchant on a whim (as they are about 2-3 miles from my work) and got Bill on the phone. I told him I had 3 knives that needed sharpening and asked how long the turn around would be. Bill told me... "I can do all 3 in about 4 minutes, maybe 5." to which I said "see you later today!". When I arrived a nice lady (sorry, don't remember her name) greeted me. I explained to her what I needed and she said "sure thing, $5/blade" I opened my case and she saw I had Messermeister knives and then said "actually, this will be NO charge. Messemeister have a lifetime resharpening deal and we honor it here." Bill got my knives to super NINJA sharp edge and I bought a "zester" I had been eyeing for some time. In short... This was the first place I called to ask if they offered knife sharpening. Lucky was I, when Chef David told me that they did! He seemed very knowledgeable during the brief time I spoke to him over the phone. I dropped my knives off and went on my way. So I brought 4 of my knives (Chef's knife, Santouku, Paring and Slicer) in to get sharpened. I haven't ever sharpened these and my parents gifted them to me when I was 19, that's approx 6 years ago so they were extremely dull. I walked in expecting to pay 8 or 9 dollars to sharpen each knife but was surprised that it was only 5$! That is an extremely good price for me and it only took about 25 min wait time to do it too! Customer service was really great too, I got greeted instantly as I walked in and while I was waiting to get my knives sharpened, I took a look around at the large displays of mostly if not all Japanese steel knives. The knives themselves were sharpened perfectly and now cooking is a little easier! read more

Bought two more knives and was treated like a queen, and even though the knives were significantly lower priced than my initial Messermeisters, I was treated as if I bought a full set of Nenox Ironwoods! I purchased a Victorinox knife and honing rod for my sister and a Victorinox meat slicer for myself that is a dream, and not so expensive that I feel like I have to baby it like I do my pricier knives. P.S. They have lots of stuff here, not just great knives and service. And no, I do not own, nor am I related to anyone that works here, just a satisfied knife lover! P.S.S. Also found out from reading other Yelp reviewer that Knife Merchant honors Messermeister lifetime free sharpening agreement. This is a family owned business, with very friendly and knowledgeable owners. The selection of knives is very good, and they have sharpening services. I went in to have my Shun knives sharpened - they did a fantastic job. I had a couple of knives that were damaged, and needed a skilled person to fix them. They really put the time into doing a great job. I met the owner when I dropped off my knives, and it was clear that he knew a lot about knives, the steel, different features of the various brands, etc. I actually ended up buying two knives while I was there. If you're in the market for a nice knife, definitely drop by. The selection is the best I've seen. In addition, you're not relying on a sales clerk at a retail store for advice or information. The owner is an expert on knives. The one recommendation I would have for them is to consider limited Saturday hours, or one night with a little later hours. ******** Here's a little more detail on the sharpening: - I had a long slicer that I chipped in three places. They were able to remove the chips and resharpen the long blade. Very nicely done. - I had a bread knife and a smaller serrated knife that over the years started losing their serrations after sharpening. They were able to add the serrations back and resharpen the blades. This showed not only a lot of skill, but just great customer service and attention to detail. This wax really well done. - My kids broke the tip off a boning knife. They were able to add the tip back and create a nice curve on the blade. You can't even tell that it was damaged - it looks like a new knife. read more
