The quality of food, the nutritional value, for the price, can not be beat. Very few fried items on the menu and what is fried you can tell is NOT fried in month old oil. Delicious fire-roasted carrots! Other people at our table, got the lamb, rabbit and steak. They said everything was delicious. As a vegetarian, I had phenomenal, homemade pasta and fire roasted carrots. My wife and I went for a date night to try someplace new, and to say we enjoyed ourselves is an understatement. We were absolutely blown away by our experience at The Paradigm Concepts. We didn't think that we could get such skillfully crafted food in Mitchell, Nebraska. Derek, the chef, is clearly passionate about his ingredients as well as his craft. It appears that everything is made in house, and everything that can be sourced locally, is. We opted to order off of the a-la-carte menu. Most of the flavors throughout the meal were subtle, but very well balanced. Our favorite part of the meal was the beef entree. It was beef cheeks that had been smoked, and finished in a sous vide. The cheek was served over pasta, which was cooked absolutely perfectly (and also made in house.) The flavors in the dish were fabulous and complimented each other perfectly! We finished the meal with a chocolate torte that was decadent, creamy, and incredibly flavorful. We loved our meal so much, we made reservations to go to brunch two days later. It was equally as delicious. This is without question, the most skillfully crafted, well-thought out food in the area. We absolutely can't wait to go back and work our way through the menu. read more
