These guys are slaying it! And bringing the flavors of Guam, Philippines and Hawaii!!! I've been following Island Style Food Truck on Instagram for months, waiting (ever so patiently) until I had the opportunity to try out their grub! And my patience was well received! I occasionally travel to Spokane for work, but most days I'm there the food truck wasn't open. :*( Earlier this month the clouds parted, a ray of light shined upon Spokane, and I was able to check them out by a brewery (bonus points)! These guys came through the brewery and gave everyone bites of their lumpia - totally on point! Crispy and flavorful! I eventually placed my order (I wanted EVERYTHING), but I settled on their Hawaiian smoked pork with red rice and Mac salad, pork Sinigang (a sour, Filipino soup), Kådun Månuk (chicken and corn chowder in coconut milk) and spam over red rice and served with finadene (a must for Guam food). Yes, it's a lot, but I had a plan to eat this for meals over the next few days. All were really good or as we say on Guam (gof mångge'), like so good that the flavors brought me back home (Guam). There is literally nothing bad I can say about them. This is what Guam comfort food is!!! Let me tell you, the owner is super cool and personable. He came in for a few and we chatted. Honestly I felt home sick. Island Food Truck exudes the island hospitality! I am looking forward to my next visit, fingers crossed that they'll be open when I come through!
