The restaurant / breakfast room is open and airy and full of atmosphere but considering it is one of the focuses of the house I don't think it's the best bit. I far prefer the small sitting room beside the bar (which is in itself not too shabby), open fires and a large brandy... very nice. The grounds are huge and just the thing for you to wander around with a hang-over, a couple of hours of fresh air, including a visit to the pot bellied pig and the chickens, leaves you hungry and ready for more food.... Which is really what this place is about. The bar food is great, a little expensive but worth it. I'm giving 4 stars because we cant award halves - 3.5 would be my preference but it in no way deserved 3 so 4 it is!!

We stayed in an executive suite in Hunter's yard. The exterior looks like a luxury stable but you would never know from the inside. Our room was so luxurious. The attention to detail was incredible! We had a welcome note, champagne, and a piece of cake waiting on the table for us. We had complimentary still and sparkling water and chocolates too. In the morning, we checked out the health club which has an gorgeous indoor pool, spa, sauna, steam room, and gym. Afterwards, we enjoyed breakfast at the Hound. Our hotel package included breakfast which was incredible. The Hound has amazing views of the driving range. For breakfast there is a buffer and the option to order something off the menu too. We decided to go with the buffet options but most individuals did both. After breakfast we walked throughout the estate. The hotel offers horseback riding, clay shooting, fishing, and more. It had Irish specialities as well as other things. Fresh fruit and yogurt, cereal, bread... name it and it was there. Bar : the bar had live music the days we were there and it was nice to be able to enjoy a few Guinness and just walk upstairs to the room. Overall, if I ever go back to Waterford, Dooley's is the place I would pick.

After dinner we were treated to an Irish Coffee demo. That was informative and delicious. I had hesitated to get one when they were being made but caved when I tasted SO's. Centrally located, historic quaint. Enjoy while in Waterford.

The hotel and golf club is about 12 kilometers outside the city so location wise, that's a plus. We got to explore the Viking quarter of Waterford which I was mightily impressed with. However, back to the hotel. From a promising drive up to the hotel to the actual reality of being in it, it just felt a let down. We were placed in the new wing which had a bland coulda been anywhere kind of vibe. We had a 3 courser later that day and my abiding memory is of the service being very off. Just took aaaaaaages for any and everything to be done. And the food was quite ordinary. This was followed by afternoon tea the next day which again was nothing but average. Being kind really. We spent one night here in the town of Waterford…read more I liked the bar area as they had several different beers on tap and for our main meal which accommodated over forty people from our bus group, we had a bar a few steps away with one server. There was a line there with a few people as we ordered and retrieved our own beverages, but it was nice to have a bar to ourselves. The food was very good, but I remember vividly my girlfriend asked for her bacon to be cooked well and when they brought it out and it wasn't to her likening, the server replied, "What, you won't eat it like this?" To which, my girlfriend replied, "No." We had a bit of a chuckle about it later as I guess the waitress was pretty perturbed that she had to instruct the cook to fry it longer. There is a favorite bread around these parts called, Blaa. I have included a picture of it. Description from Wiki - A blaa /bl/, or Waterford Blaa, is a doughy, white bread bun (roll) speciality, particularly associated with Waterford, Ireland.[1] It is currently made in County Waterford and south County Kilkenny. The Blaa was soft and delish. I have also added a pic of the Blaa at the local market. Final thoughts, the hotel is a bit dated and older, but I was impressed with the food. Overall, this was a solid breakfast spread. From their hot breakfast menu, do yourself a favor and order their "Local 'Walsh's Bakehouse' Blaa". This is a sandwich served in a Waterford blaa (bread/roll) with sausage, rashers (i.e. bacon) and a fried egg. The Waterford blaa is the standout part of this sandwich with how doughy and soft it is, while the contents inside were excellent! This sandwich, with a side of fruit and a cup of coffee, is an excellent and filling way to start the day!

The golf course is expansive and there is the hotel house, pro shop, clubhouse, cocktail lounge, and formal restaurant on site. When checking into our rooms, we quickly realized that we were not in the correct rooms per our reservation. We had a golf course view rather than garden view and bed sizes were incorrect. Management was not able to do anything till the following day but accommodated our group for the error with a comped 3 course dinner and drinks in the formal dining room. The food between dinner and breakfast was some of the best we've tried on the trip thus far for flavor. Drinks were also made extremely well and the hotel offers free live music in the lounge every other day from 9:30 - 11:30pm. The rooms were very spacious and beautifully historical. The bathrooms appeared to be updated in opposition to the rooms. Note that all rooms do not have air conditioning but they supply each room with a fan and certain windows can open. Golfing didn't start till around 8am so noise wasn't an issue in the mornings. The drive into town was about 20-25 minutes and ubers/taxi rides were about 20-26 euros to get there. Overall, we had a tough start to our experience but they did take care of us, the grounds were beautiful, and it was wonderful staying somewhere that was historical.

The rooms were nice with an added raised area to be able to put your luggage. The restaurant was very accommodating of a gluten allergy, and they would walk me through what was available and change some of the items on the menu to fit my dietary needs. It was hard to leave here after the 2 nights.
