Needed something light but flavorful without weighing me down. Got in there right when they opened and it clean, comfortable, with a few items from home. I ordered the chicken pho and my wife went for the beef. Each sip of the broth cleansed the pallette and the meat was cooked well. Compared to San Francisco pho this pho is equally as good. Portion sizes are great, especially if you've spent all day walking around. The noodles are actually imported from France so you don't get those nasty noodles that you may have encountered if you've had pho at some other places. The beef is tender, the broth is filling and the spicy sauce makes your mouth water(if you like spicy, which I do!). This place is relatively new and the prices are reasonable for Madrid. Arrived 15 min before opening and there was already a line. Made it in on the first seating which was great. Was asked to visit their bar first as they slowly made their way through bringing people in to the restaurant to dine. Was eventually escorted into the restaurant. Seating is like a giant oval around an open kitchen. Energy is electric, loud, stimulating. The food consisted of fusion and/or modern interpretations of street food classics from across Asia, and other parts of the world too.
