Wild Indigo Cafe is a worthy addition to the food landscape here, and probably the best lunch option in the area. It's a food truck with a permanent location that includes dining tables. The menu is creative and interesting and includes a range of hearty items, many of them fried, but some also with some healthy ingredients. Have any dietary concerns or questions? Just ask. Everything is made fresh to order and they'll accommodate any requests with a smile. I made the mistake of going for the Chicken & Waffles, just because so many reviewers focused on this dish, and because it seemed like a decadent, standout choice. Bad idea. The chicken was burnt to a crisp (I broken my knife trying to slice into it), and the waffle underneath was the opposite: flabby and dull. Plus it's a one-note dish. Not a lot of complexity compared to the many other interesting choices on this menu like the Dosadilla or Indigo Burrito. Try those instead. The sleeper hit? The loaded fries! Who knew? The "wild style" fries are fresh cut and perfectly cooked, and the toppings of pulled pork and sauteed onions and sauteed greens make for an outstanding combination. Even a tiny bit healthy. I really was looking forward to having lunch here, their menu is so creative! The good- adorable truck, friendly servers, and very pleasant setting for lunch or breakfast. Vegan & gluten-free options. Unfortunately the food execution was poor. I LOVE cardamom so I ordered the chicken & waffles, and the chocolate cardamom milkshake. I barely tasted it in either dish, and although the shake was good the chicken & waffle was not: the chicken was extremely overcooked, dry, and the crust was just shy of burnt, while the waffle was covered in a VERY spicy sauce so I could barely taste the waffle (which was a good texture). I did not expect "bbq chutney" to be so spicy! My partner had the dosadilla and it had very little flavor, just in the fennel yogurt. read more

Lovely little coffee "house" that I stumbled across as I was driving to Bryce Canyon. I was absolutely amazed at how lovely of a little set up this place had, especially for being out in the middle of nowhere. Everyone was super friendly, the bistro type table seating outdoors was fun, and they presented amazing views of the area. The menu offered several types of coffee, Chai, breakfast options, and even a lovely assortment of locally canned goods. This was a beautiful little, unexpected yet delightful stop on my long trip. The coffee was delicious and bold in flavor. I'm so glad I stopped in! If you're ever in the area, give this place a try. It's purely magical. What a GEM! If you are looking for a fantastic spot to get a beverage, snack, bite to eat, or some goodies to take home, THIS is the spot! You cannot miss this beautiful and vibrant colored food truck right of highway 12. They've got the most delightful dirty chai.. a lovely (mango) lassi.. the most wonderful waffle sandwich. Seriously, the pickled garnishes on top of the eggs and sausage sandwich between a waffle that's fresh is fabulous. They also have GF options as well as veg options so it's great for all! You can also pick up some jams, some sauces and some pickled items to take home with you. They also sell pottery made by locals as well as soaps. The folks running the truck are so kind and service was so fast. They have a lovely setup. Everything is super clean. Very cute! The vibe is just so marvelous and so exciting to see in the middle of the desert. Absolutely worth the stop! This is what makes Boulder so marvelous!!! read more

They are a relatively new food truck in the small but beautiful town of Boulder! What makes this food truck special is the inspiration it takes from Indian street food brought to a modern American breakfast menu! The flavors are absolutely amazing and you will definitely feel like you cannot get enough. The owner, Lacy, really wanted to create "food with a flair" and I think she has done just that! We ended up getting the Cardamom Waffle, Dosadilla & an iced chai. Our favorite was definitely the cardamom waffle. It was perfectly crispy on the outside, while light and fluffy on the inside. It was also topped with the most decadent whipped brown sugar butter, cardamom maple syrup & a delightful chai whipped cream! Every flavor was better than the last & paired all together is a breakfast that I know I will be craving to have again! We also really enjoyed the Dosadilla, which was a new take on the breakfast quesadilla with some wonderful and unique flavors. We really enjoyed the texture of the dosa itself and with the fire cider creme & potato mashers topped with chutney, it was a mouthwatering meal! They really have nailed those delicious flavor combinations! I think it is an absolute MUST TRY if you are ever in the area! A delicious, healthy, and unique food truck with a vibe! Wild Indigo Cafe was right at the mouth of Boulder if you're heading North from Escalante. The perfect place to enjoy some delicious breakfast & brunch foods before or after your adventure. The food is all quite unique and aesthetic, made with wholesome and fresh ingredients. Plate sizes run from a good hearty meal, to more of a snack. We ordered the Breakfast Waffle & Busy Bee. Both of which were delicious! Busy Bee sandwich was pretty small for the price, though the flavor was on point. The Breakfast Waffle on the other hand was quite large, and also contained quite a bit of unique flavors. They also have a full coffee bar and we're making other guests a variety of drinks. The mural you see was being painted as we ordered! This cute little cafe was a surprise find. Their fusion dosadilla was on point, perfectly crispy on the outside with a cheesy egg and kale filling. The butter chicken sandwich was well spiced with a juicy chicken fillet. The curry fries on the side were amazing! I also got the chai which was perfectly spiced and hit the spot. They also offer ice cream from a local ice cream shop. I was surprised to find a golden milk ice cream which was very good. Overall, a great meal to end a morning of hiking. read more

My wife and I each had a hot dog wrapped in a dosa (Indian-style thin fried bread from lentils and rice) with kimchi (Korean-style cabbage) and (American-style) mustard. Delicious and coincidentally gluten-free if you happen to be a celiac. A creative cosmopolitan treat at an outdoor food trailer just after descending from the rocky wonderland of Escalante National Monument. This lunch put the usual American hot dog to shame. One of the best meals we've had in a car tour of the Southwest. The server was a friendly chef transplanted from Maine. And the scenery from the outdoor table beat the hell out of anything we've ever viewed from a restaurant table! Six stars out of five! read more

This food trailer has only been open for a month. The food is extraordinary. We had the veggie dosa, two dosas (Indian pancakes) filled with rice and vegetables, with two salsas, and the dosa dog, a beef or vegan hot dog with cheese in a fried dosa. My husband liked both equally; I preferred the dosa dog, with its delicious sweet salsa. If I lived here, I'd be a regular. Wow! Original food ideas that are very high quality and very tasty! I did not expect such a great brunch when I walked up to the trailer. It was extraordinarily good food! 4 of us ate and we were all super pleased with our meals. I highly recommend this stop along the road. LOCAL GUIDE FAVORITE - I love coming here with my guests when hiking in Grand Staircase Escalante National Monument. I have eaten just about everything on the breakfast menu - the dosas and French toast with fresh apricot jam and cardamom whipped cream are favorites. The Backpacker breakfast is the perfect refueling after a long day on the trail and a good nights rest. We were fortunate enough to have dinner there one night and I will definitely come back - had the vegetarian curry and cherry fritters with rose glaze for dessert. We sat in food comas and looked out across Boulder valley - great way to end our trip in such a perfect location. read more
