I contacted Chef Will regarding catering for my surprise marriage proposal. I sent $250 for his services in March for my marriage proposal dinner in April. Due to COVID-19 I was unable to proceed (AirBNB owner cancelled then I was unable to secure another location). I told Chef Will as soon as I found out to cancel but he never refunded me. He said: "How do you suggest that I recoup the money I would have made from the other people I turned away for the date you placed a deposit on? You cancelled. You could've accepted a delivery on the date you requested and either improvised or eaten it later." - I told him he didn't give me any options such as delivery and never responded to my emails until much later on. He then tells me "I spent the last 2-3 days trying to book your cancellation with a couple of people I had turned away due to your booking. I had no luck." - Because you can't find any additional clients you won't refund me. Great business model. "As a professional courtesy I can offer you a discount on a future booking or a 25% refund. " - Thank you so much, I spend $250 on absolutely nothing and I get 25% off next time I want to throw my money away? To sum it up: Chef Will stole $250 from me and was unprofessional. We had 10 folks over for my mother's 80th and Will showed with an exceptional assistant and delivered an off the chart 4 course meal with wine pairings. He had a ton of choices for us to select from and I appreciated the range of options from the down-the-fairway stuff to things I've never had and may never see again. Everything was delicious. The guests were all thrilled. The weather was absolutely terrible but he made it anyway. Cooked everything in her kitchen and the place was cleaner when he left than when he got there. We asked Chef Will to help us develop & make a "practice run" on a menu for a 8-person dinner party. He picked up all the food in advance and showed up around 4pm. He had a menu of 2 appetizers (bacon-wrapped quail; cream cheese pastries with salmon & caviar); mixed veggies; beef stroganoff; au gratin potatoes (our request); and a white-chocolate bread pudding for dessert. Chef Will cooked & taught us the steps needed to prepare this feast on our own. He covered the basics in food preparation, "what goes great with what", and special tips & tricks to make the cooking exercise easier and, what's this, fun?! We invited 6 others to join us at 6:30 to serve as "taste testers".The food was excellent and we were secretly pleased to have a few leftovers for the next day. Chef Will even cleaned up the kitchen while we pigged out. The cost was $250 (2 students) plus food ($200). This felt like a fair deal after having taken several classes at Sur la Table where you mostly stand and watch someone else cook, then have a relatively tiny portion (and have to rush to get out, so the next class can start). Plus it's in your own home with wine, music, and a relaxing atmosphere. Really a great time. We absolutely would recommend Chef Will to our friends & family, and will keep him on speed dial for catering events as well. Improvement suggestions (to take from 4 to 5 stars): Have more things for the students to do on their own. Provide recipes for later reference. read more

He was timely, professional and a joy to have in our home. We recently had Chef Will in our home to prepare dinner for us and our guests. It was an awesome evening from the moment he got here. We actually had several communications before the event, to fine tune the menu and outline the progression of the evening. Chef Will was very punctual and came in ready to get started. At our request, he made himself at home in our kitchen. He used some of our cookware, kitchen utensils and our grill, and he was very respectful of our home/property. I had the pleasure of visiting with him while he prepared the dinner. Such a delightful guy, and very impressive with his love of quality food and just the Houston food scene in general. The evening was about 2 hours once we started eating. The food was awesome. The food was very flavorful and the presentation was top notch. As we ate, he continued with the preparation/plating of the next dish on the menu and cleaned-up as he went. When he left, other than some plated leftovers, there was no evidence he had been here.
