Got about 40 pounds of burger and some jerky and elk sticks. I've gotten more meat off of a deer! After charging me $620 to process, they brought out two boxes of meat! The last elk I got was smaller than this one and I got 3x the meat. I wondered when a guy came in and brought elk meat when I was turning it in to be processed. Well, I guess they'll be making a killing selling my elk meat. From now on, I'll just take it home and having it processed there.

The sirloin steaks, two per package would feed at least five people. The bulk burger was great, when we got to the last box in the bottom of the freezer, 30-35 1lb packages. it was all marked "Wild Game Ground Elk". It was still in the box and had my name marked on it. The reason we have been going to Craig Colo was to insure a good cut, proper handling and getting OUR meat back. They are very expensive but I don't mind paying for quality. We sent eight prime steers, no one was very happy with the overall quality and service.

I love that the cheese is mixed throughout the brat. Too many have a tube of cheese inside, and it always seems to make the brat greasy. Not these. The jalapeños added a medium heat and a nice flavor. I'll admit I got the bison because they were the only other brats in the case; an afterthought. Man, was I wrong. The bison was outstanding. They're labeled as brats, but it's more dense. The spice blend is perfect, and the texture pleasing. They have a bit of heat, but not bad. You're probably going to Cut for steaks or seafood, but don't leave without the bison.

My last experience I bought 2 Rib Eye steaks $105. They were the fattiest steaks with 50% waste. Go back and talk with the owner. He could care less we've been 20 year old LOYAL customers.
