We spent a couple weeks in Wolcott recently, and Cut was one of the first places I visited. I came in specifically for their brats and sausages, and walked out with elk jalapeño and cheddar, and their bison. The elk was really good. I love that the cheese is mixed throughout the brat. Too many have a tube of cheese inside, and it always seems to make the brat greasy. Not these. The jalapeños added a medium heat and a nice flavor. I'll admit I got the bison because they were the only other brats in the case; an afterthought. Man, was I wrong. The bison was outstanding. They're labeled as brats, but it's more dense. The spice blend is perfect, and the texture pleasing. They have a bit of heat, but not bad. You're probably going to Cut for steaks or seafood, but don't leave without the bison. read more

Unexpected find....and so worth it. Got the poke for breakfast along with a piece of smoked salmon. Wow!!! Perfect choice!!!!!! The Poke was perfectly seasoned with a little green onion. It was light and fresh. Loved it! The Salmon was smoked on the big green egg and cooked perfectly...not over cooked at all. Had perfect flavor and moisture. Yummy! To make it even better got a piece of the Colorado goat cheese - Haystack mountain, Colorado Artisanal Goat Cheese, Camembert(from the meat market). Then went and picked up a loaf of salted sourdough bread from Hovey &Harrison a few shops down and made a sandwich with the salmon and cheese. Perfection!! read more

The food here is so good I don't think I can put it into words. I was hesitant at first but after I left I was so glad I decided to try it. Everything is locally sourced and you can tell because the quality is so good. I went there just to get some steak and chicken but ended up buying much more because how good it all was. I bought spicy Italian sausage which was the best sausage I've had in my life. It's very nice inside and everything is organized. The lady who I believe was the owner was so nice and gave us all the info we needed. She was a very good saleswomen. read more

There are very few choices for fresh meat and seafood in the Colorado Mountains, seafood is difficult to find anywhere in our land locked state. "Cut" definitely deliverers a get product. You cannot get fresher options without going directly to the ranch or ocean. read more

While visiting my daughter in Edwards we stopped at the butcher to pick up some meat and sausages to grill. The shop was so clean and tidy with lots of options for fresh seafood , cuts of different meat and variety of sausages. The butcher was friendly and helpful and made lots of suggestions as how to stuff and grill the fish etc. The shop is located in Edwards village which is a cute place to walk around with lots of shops and all types of eateries and stores. read more

Out here for the week skiing. Wanted some nice steaks for middle of the week. Everything in the shop looked to be high quality. The woman behind the counter was friendly and knowledgeable. We ended up getting a cut off the wagyu NY strip and a boneless rib eye. Both cooked up tender and beautifully. In addition to the steaks we needed to fill in a dinner that was off the plan and got some of the spicy Italian sausage and some Bolognese sauce from the freezer and threw together another dinner out of that. read more

Wow - they had the FRESHEST fish I've ever had! Their Colorado steaks were amazing too. I went in there for just one thing and left with so much more, including the homemade sausages and soup! The service was outstanding and very helpful. Most importantly, especially today, it was VERY CLEAN. The whole atmosphere was clean. Love love love this market. Amazing fresh fish and great steaks. Bought way more than I meant to and was happy with everything.

We were in Vail last week and decided to grill steaks. After a less than satisfying trip to the grocery, we used Yelp to find Cut: Artisan Meats in Edwards, a 15-minute drive to the west on I-70. We ordered natural angus NY strips and ribeyes. Sam hand-cut them to 1-1/4 inches as we requested, and had them wrapped in no time. Several of our group commented these steaks were the best they had ever tasted. We were also enchanted by many of the other items in the meat case - clams, shrimp, trout , salmon, and a beautiful piece of ahi tuna. I highly encourage everyone to meet Sam and try Cut for your meat, fish, and poultry needs in Vail Valley. And you can get the rest of the groceries you need across the street at Village Market in Riverwalk. I highly recommend your patronage of this locally-owned business. read more

This place is excellent. I live in NYC and spend several months of the year in Colorado. In my opinion, the fish and cheese at Cut is better than anywhere else. The fish is so fresh. I haven't been buying fresh meat, so can't speak to that. However, I did make a charcuterie board with meat and cheese from Cut. It truly topped any charcuterie board I have had. Now, I don't want it from anywhere else because I know it would pale in comparison. If only I could find fish like this in NY! read more

We have 2nd home in Vail, Co - we just discovered CUT this past summer. Have never seen such fresh and beautiful "cuts" of every meat that colorado is known for. It is small, but amazing. They have special seasonings, and other great items as well. They have amazing cuts of Fish in season, and the best escargot I have ever had. We live in Laguna Beach, Ca and can't believe there is not something like this is our area. An additional great thing is there is a fabulous wine store connected, (I think owned by same owners), and it is called "EAT/DRINK" - to pick up a bottle of some pretty awesome wines! Can hardly wait to arrive in town and get "cuts" for thanksgiving! read more

I think what you see in the case can be a little limited in variety during the off season but they are more than willing to special order anything for you. Everything is fresh and really tasty though I'm not sure their items are organic at all. read more

It's been a long time since I've yelped anything, but I'm coming back for Cut. I've lived a lot of a places-abroad, on the coast, in the Midwest and now in Colorado, and this is the best seafood I've ever purchased (which is CRAZY considering how far we are from an ocean). I don't know what to say beyond everything we've bought here is beyond. We've done scallops and tuna, and they're some of the best I've ever had. Whether you live here or you're in town visiting, I highly recommend picking up something here and doing a dinner at home. It's pricey, but will cost you only a little bit more than you'd pay at the regular grocery store and a fraction for the same meal out. There's not a ton of selection, but I like to think that's because they're getting the best they can. In full disclosure, we haven't done meat yet because the seafood is so darn delicious, but I have really high expectations. read more

called today to ask if they had any lobsters, a woman called me back and told me they could get some by tomorrow. i said "ok great, how much are they?' she did not know the price when i asked. "probably like 30$/pound, then in the next sentence she changed her mind and said "probably about 40$/pound" i asked if she could find out so i didn't order the lobsters and walk in to the store and be told an unexpected price, being that we are no where near the ocean i knew they would be more expensive...i just wanted to know how much. when i asked if she could find out, she grunted, and sounded VERY frustrated and irritated. She acted as if i had been asking her to come to my home, cook and spoon feed me the lobsters... she snapped and sarcastically said "you know what, best of luck" and hung up on me. this is my first negative review of a restaurant EVER. her attitude was uncalled for and unnecessary. if you're looking to get meats, DON'T go to cut!!!! go to colorado meat company down the road in avon, co!!!!! read more
