Out in front was a fully functional waterwheel that was the main source of power for their milling machine. All the ovens were wood fired. It's as if nothing changed over the last 700 plus years. Upon entering we saw the prep and work areas but all was quiet like they just finished baking. Definitely small batches compared to more commercial bakeries. Since we visited in the morning, we ordered their super soft and sweet brioche rolls and the cinnamon raisin buns. Our server pulled them fresh off the racks instead so they were both warm and heavenly in smells. They were delicious.
