I had dinner with mom and brother at Baldío last week, and we had an incredible meal. My mom is vegan, so I was thrilled that Baldío had dishes for all of us to enjoy. Not only is it vegan-friendly, Baldío is focused on sustainable dining (I love this manifesto-like mantra on their website: "Against daily haste, the pauses of the seasons; against irrational land exploitation, agroecological processes; against anonymous mass production, the visibility of farmers; against indiscriminate waste, zero waste.")
The three of us shared two starters: their corn focaccia (with cilantro oil and onion puree with chintextle) and their heirloom tomato medley (with pickled chayote and sikil pak). (These two starters were vegan, except my mom couldn't eat one of the dips with the corn focaccia). Both were really good, but the corn focaccia was memorable. I'll be dreaming of it for a while. My mom had a vegan entree - their yellow corn tamal with barbacoa mushrooms, salsa borracha, and pickles - which was delicious. And my brother and I shared their New York Strip with red mole, escamoles, and a charred half onion topped with chapulines and maguey - easily one of the best dishes over this trip to Mexico City - wow. They also have an incredible wine list, so I had to get a couple of glasses.
Add to all this that Baldío has amazing service and really cool decor and vibes, and Baldío was maybe my favorite meal of the week I spent in Mexico City. On my next trip to Mexico City, I'd love to make a return visit for another meal that I'm sure would be incredible. read more
