Sure, there are hundreds of places offering "original" paella and many tourists fall for those glitzy pictures on the sidewalk signs. But not me. I asked a lifetime resident, a food aficionado, a trusted source for his favorite. He was quick with a response and didn't even have to think about it. Casa Cesar. Situated back from the sea front away from those "in your face" restaurants capitalizing on proximity to the beach with high visibility, you really need to look hard to find this place. Even the taxi driver drove by it twice! But you need to find it. It's ridiculous. Greeted by the owner (?) who gave every single table attention and an explanation of how this meal works. No menu. Fixed price. 3 appetizers (unreal - and oh my, those cockles?), unlimited wine and beer, seafood paella featuring fresh that day fish, shrimp and assorted seafood, dessert, and a choice of after dinner drink. Everything was remarkable but that paella? OMG! Cooked slowly to order, the flavors were full and divine. The crispy black edges of the rice were exactly as they should be. I've had paella in many places in Spain but this? Best ever? Yes indeed. Best ever. Service was friendly, atmosphere delightful, value incredible. Yep. Pricing was €28 per person. Go ahead. Re-read what you get for that. But you know, I would have gladly paid twice that and been happy. Wow. I'm still dreaming of this meal.

Unfortunately, we could not get a beach view. The table was sticky from the previous party. Oh well. We ordered red vermouth, but they only had "Martini" OH well. The paella came in 40 minutes as promised. We also ordered a bottle of Rosé. They did not have the one we wanted, so they substituted. Oh well. The paella was pretty great. 7.5/10. They could have crisped it up a bit more, but I understand they won't because tourists think it's burnt. The chicken was a bit dry. Watch out for chicken bones!! The langostena and gambas were good. We also had their Valenciana paella, which has chicken and rabbit, but it was too overcooked and that not juicy. Service: Very nice and attentive staff. After being turned away by multiple restaurants, Luz de Luna kindly accepted us. The restaurant looks about the same as the rest of the beachside spots here. Very casual, with slightly distressed exterior design that certainly does not add anything positive to the general image of Valencia's brown sanded beach. But, when food rather than theater is the primary objective, it is actually the spot to be. Service was efficient and pleasant. There are quite a few gems on the menu aside from paellas. Cuttlefish bladders was an interesting dish to be shared. Calamari is excellent. Paella is very good, although for my personal preference the rice was a bit undercooked, it is only a matter of preference. All around, while I probably would not go out of my way for another meal at this establishment, it is an excellent choice in the area.
