Working in a fully equipped professional kitchen, these students demonstrate real skill and polish. Their 1,200-hour training program clearly shows in both the quality of the food and the attentive service. The Cypress Room, with just four tables and seating for about twenty guests, offers an intimate fine-dining atmosphere that allows the students' talents to shine. I had the gnocchi with sausage -- rich, balanced, and very satisfying, though a more refined presentation would have elevated it further. My wife's shrimp pasta, featuring house-made pasta and freshly baked bread, was excellent. Dessert was lemon bread; while a bit dense for my taste, the accompanying sauce was outstanding.
