What is raclette? Raclette is a Swiss dish in which a wheel of semi-soft cow's‑milk cheese, traditionally from Valais, is heated and the melted layer is scraped onto potatoes, bread, and pickled vegetables. Raclette refers both to the cheese and the dish. The name comes from the French racler, meaning "to scrape," describing how the melted cheese is served. Our traditional raclette had a wedge of cheese that was heated on a special tabletop electric raclette machine. It was served with bowls filled with boiled red potatoes, cornichons, tiny, pickled pearl onions, steamed veggies, cubes of bread and sliced fruits. The meal was incredible but most of all was Marco's hospitality and the setting. It is actually part of a tennis club but open to the public. We arrived at our appointed time and were worried when our online reservation (go to their website) couldn't be found. When I pulled up my email confirmation we discovered I had booked that date....but for a year from now! (A bit surprised an online reservation would allow submitting a rsvp request that far in advance). Luckily for us they had one table left. A group of 44-all the remaining seats-were expected at 7 so we hustled with our ordering. We started with a charcuterie platter then all got the special, grilled white fish (which was really good). Interestingly, the fish came atop mixed fall vegetables (tasty) then in addition, they bring fries and a pasta salad plus three sauces all served family style to the table-so plenty of food. Loved the bernaise with the fries. To their credit despite the presence of the large group, we never felt neglected or ignored. It was fascinating to watch the precision of the small staff in plating and serving the group given the very small open kitchen. A truly hidden gem off the beaten track and well worth taking the train to dine here.
