The world's best mac and cheese was also super good, but I'm always seeking more adventurous flavors. Lastly, the panini was perfectly toasted and crispy with a nice cheese pull! It was really good, but the smoked salmon mac and cheese was magical to eat! The store is average sized and they have a standing area near the factory for you to eat and see the cheese making. They use penne noodles with I find unique for a Mac but was a good choice for holding as much of that cheese sauce as possible. It was a little starchy for my preference but still very good. There's little red flakes in the sauce that give it a good flavor profile and little kick. There's a stand up bar after you order where you can eat your food but no formal seating.

Do note that the cheeses can be pretty expensive, but I chalk it up to the location (rent is expensive!) and also the sourcing/rarity of the cheeses. I wonder if the cheeses ever get discounted if they're at the end of their shelf life...I would totally snatch them up!

Hint: Locals know to call in their order in advance to avoid waiting 20-30 minutes on premise. I went with the mushroom melt and she went with the tuna melt. The sandwiches were awesomely good! The country-style bread was exceptional and the sandwiches were packed with tasty ingredients. Neither of us needed dinner after that lunch. Service was friendly, which is impressive when you realize they are cranking out sandwich after sandwich to locals and visitors as fast as they can make them.
