Our contract said the catering team would arrive around 4:30 PM, but dinner wasn't until 7:30 PM. In my head I kept thinking, "Oh Lord... this food is going to be cold!" Well, let me tell you -- I worried for absolutely NOTHING! When dinner was served, the food was fresh, HOT and delicious! And it wasn't just me saying it. Our guests repeatedly told us how amazing the food was. What made it even more special was that the menu gave exactly what I wanted for our wedding -- a multicultural experience that represented the joining of our families. My Nicaraguan mother-in-law especially loved the rice and beans, which gave her that familiar Nicaraguan-style gallo pinto flavor.
