I've always driven by this spot, yet never stopped. Today, I'm so glad I did! After visiting Nine Lives Thrift (shout out for another small business across the road), I saw that Bake Bread was open and so I had to stop. Hours are very limited, so do ensure you check in advance prior to making a visit. The concept is simple: baked goods, coffee, and an old school bus to enjoy your pastries if you desire. There is no dine in option outside of the bus and a few surrounding patio tables and chairs. To order, visit the little window and choose your pastries which are all displayed in a case. Cafe drink items are listed on the window as well and include all of the normal items such as lattes, cafe miels, Americano's, etc. I ordered a chocolate chip cookie and a sour cream cookie and ate both in one setting. Yummy!! Bakery items rotate and there is also the option to purchase loafs of bread. There is a cool concept where you can pay what you desire on a certain day (or more) and no questions will be asked. I enjoy this feature. The bus is really neat and includes a kid section at the back of the bus with a few books and coloring materials. Fantastic concept! Thank you, Bake Bread! I've lived in or near St. Paul for the longest time and have been meaning to come here. I chose one of the coldest days to walk up to the Togo window to place an order, heh! There was a bus in the parking lot to the side of your interested in eating and playing games that they have available. Their inside was closed. We tried the sesame bread (not pictured), almond scone, and croissant. The croissant was excellent - highly recommend. The almond scone, now this sounds crazy, tastes like coffee. I love coffee flavor, but if you're not a fan, maybe pass on this one. My friend tried it and I asked her how it was and she also tasted coffee prior to me confirming I tasted the same thing. Not bad at all, we enjoyed it, but be prepared to taste coffee. The sesame bread took our breakfasts to another level. Crunchy and tasty. I'm convinced this is just a drug or cartel front because I swear every time I've gone there they're closed. Closed at noon, closed at a Monday and now it's Wednesday at 6:40am closed again. I don't know how long they've been in business or if they are successful but what's the point I have in this business that y'all never open?! I've tried these French bakeries around here trash and I have been waiting for 4 weeks to try this place. No luck!! I give up not going back I'm not going to ask they're open even though there's people in there and they're look like they're doing something but never open. It's literally a window shopping business. Look but don't touch. I can't even read it cuz I can't try s***. WTF?! Most minnesota bakeries can't hold a candle to bakeries in Ohio or San Diego. Anybody know where I can find a Jewish bakery?! My bestie and I have been eyeing this place for sometime now, so we decided let's give it a whirl. First time here, we were looking at the window of goodies and all of a sudden this friendly gentleman opens this window and says how I can I help you guys? It kinda scared me because I didn't notice the window there and thought we were looking at the goodies outside prior to ordering inside. Oops! Haha! We ordered the So Sesame loaf, almond scone, and croissant. Next time, we'll have to check out the Bread Bus which is Brake Bread's spot if you're looking for indoor seating. The gentleman helping us mentioned it's a cute cozy spot and he enjoys taking his breaks out there. All of our items were fantastic. The croissant was soft, flaky, and oh so buttery. That almond scone was heavy/dense, smelt so almondy, but I got a coffee/almond taste. It was SO delicious. It was soft and oh so flavorful. The So Sesame bread was great as well. Can't wait to have it with my eggs this morning. I'll be back to try some coffee and another almond scone. read more

Small scale bakery turning out great whole grain breads and pastry. They have a walk window to order but you can also preorder online. They'll even bike their goods around and deliver to your place! That's where the name comes from, after all! The service and bread have always been fantastic. Highly recommend their épi baguette, cardamom spinner, and focaccia. I dream of Almond Scones from Brake Bread. Some may venture to say I relocated from San Francisco to Saint Paul just to be closer to this carb Mecca. Scones, cookies, breads; they're all delicious. The sweets are perfectly balanced in sweetness for my liking. Love the flavor pairings and unique spices that make their way on to the menu. The subscription set this very user friendly and reliable. Baked breads ability to pivot and adapt to the changing times has been impressive and much appreciated. Life is hard, but Brake Bread makes it a bit more palatable. read more

After stopping at Mojo Monkey Donuts, across the street is this lovely bread store. We picked up a loaf of hot out of the oven Jalapeno Cheddar Bread, a Cardamom Roll (which I sampled), and 6 lunch box cookies. They gave me a free cookie for being new customer. They hooked me! During the pandemic - seems a lot of stories begin the same way lately - I signed up to be a subscriber to their weekly bike delivery service to a local pick-up site. Since then, I've been enjoying a fresh loaf of bread - usually their "Batard du Nord" - each week. A thick slice of bread, toasted and slathered with creamy peanut butter, is my typical morning breakfast, along with homemade coffee, either cold-brewed in the warmer months, or hot brewed (pour-over style) in the cooler/colder months. Sometimes, I'll also include in my pick-up order a tasty sweet treat. My pick-up location is convenient to get to (it's just about a mile from my house and most often I walk there to pick up my order). Items are always tasty and fresh, and of excellent quality, IMHO. For the time being, their retail shop is open to the public Thurs. - Sat., 8:00am-12:00pm, except around the holidays when their hours will be limited, and posted someplace, like their website, Facebook page, or Instagram. Wow. The bread is amazing. I spend a lot of time in Europe and have been spoiled by the quality of bread there. I've come to not like bread in the US but this is amazing. Earthy, chewy, rich- a celebration of yeast, salt, and grain. The cinnamon roll I ordered was flaky and more cinnamon than sugar, which is how it should be. Coffee was great too. Let me tell you this bread is what dreams are made out of. I was the grand champion winning bread maker at Todd county 4 years in a row 4-H and 3 years in a row for open show(the big competition). So basically I know my breads. I learned from my Grandmother who had been making breads for 65 years by the time I started. She learned from her mother who learned from hers. This bread is the real deal. If you want to up your sandwich game, buy brake bread. If you want to have a better tasting breakfast, buy good coffee and eat brake bread. If you want to have convenience in your life, have brake bread slice it for you. If you want to truly test my theory, find a toaster, throw it out the window and eat your brake bread as is. We received complimentary treats for our first visit - and possibly some of the best sourdough I've had in my life. The strangest thing brought me here. Local CEO of St. Agnes Bakery, Danny Klecko checked in here on FB. So I form the conclusion that they are serving bread from there. Nope it's just some new folks with their own thing. If there is such a thing as healthy bread, it's here. I got the white, because I stocked up on tuna. What a sandwich that was, damn. The next bread heaven was the cheddar jalapeno roll. The feta olive looks enticing as well. I had a cardamom roll. As sweet as it was, I think some raisins would have kicked it up a notch. Some of the baguettes were at least a foot long. If I'm having guests for a French or Italian dinner, this is definitely on the menu. I am in Minnesota for over a year - transplanted from New York and used to great breads and bagels. Couldn't find bread that would make me excited... farm markets, specialty stores, you name it. Until I tried some bread samples at Mississippi co-op, and the trail brought me to Brake Bread. This kind of store would have been at home somewhere in Greenwich Village in New York - attention to detail, all great ingredients and texture! Love all the breads I tried.Not as excited about their desserts but it's secondary to me. And all the people working there are super-nice. read more

What a fantastic little local bread shop. Any place you walk in and here others referring to the owner by name and saying things like "hi neighbor" and " see you around neighbor" you know you're supporting a good place. Everyone that walked in was immediately greeted no matter what the employees were up to, and told they could grab some coffee while they waited. Everyone was so nice and the food was even better! I ended up getting two toast bar options, the lug covered in peanut butter, caramel and raisins, and the razz covered in raspberry jam and goat cheese. The owner was nice enough to let us try their "fwuffy" honey bread and served our toast on that instead of the regular sourdough-like toast they have. I've never had bread as soft as that fwuffy! The toasts were delicious and there was no skimping on the toppings! We also tried the snickerdoodle scone. Perfect consistency of flaky but firm. Highly recommend to check this place out and support the locals in Saint Paul! read more

Wow, this was a delightful surprise. I got an almond scone and a dozen cookies. Traditional scones are supposed to be crumbly, but they can also be dry. This scone was cake-like which meant it was dense and moist, though not crumbly, but that worked just fine for me! The cookies were $6 a dozen, a good price, and they were delicious. My favorite in order: ginger snaps; chocolate and sea salt; oatmeal, chocolate chips and sunflower seeds; almond shortbread (I think?) I will definitely be back for bread. My husband is from the Netherlands and is a bread snob. We have tried literally every bakery in the twin cities and this place is the best, by a lot. We especially love Granny Brakes and Poppy Wheelie, but I've also tried the Fwuffy and nacho bread and they are all superior. Keep up the excellent work! read more
