A quick search pointed me toward Ruby's Cake Shoppe & Pastries, and after seeing it was one of the highest-rated bakeries in town, I figured the Universe had spoken. Off I went. Ruby's sits quietly in a little strip mall that would be easy to drive right past if you weren't specifically looking for it. Fortunately, I was looking for it because a day with a cupcake is almost always better than a day without one. When I walked inside, I had the bakery all to myself. As an overthinker who's capable of spending way too long deciding between desserts, this was tremendous news. Nobody behind me. No pressure. Just me staring lovingly into the bakery cases trying to convince myself I had enough self-control to leave with only one cupcake. Spoiler alert...I did not. Being the peanut butter enthusiast that I am, the Peanut Butter Banana cupcake immediately caught my eye. Banana and peanut butter is one of life's greatest combinations and this cupcake absolutely proved my point! The cupcake reminded me of a wonderfully moist slice of banana bread while the frosting was thick, rich and unapologetically peanut buttery. This thing was GOOD! Then Ruby herself came out to check on me. How cool is that?! We chatted for a few minutes and she told me her favorite cupcake is the Hummingbird. In fact, she laughed and admitted she usually eats three every time she makes them. Three?! Challenge accepted! Just kidding. Mostly. Naturally, I had to see what all the hype was about. And Ruby wasn't lying. The Hummingbird cupcake completely stole the show! It was incredibly sweet without being over the top, and the pineapple running through the cake made every bite bright and interesting. The cream cheese frosting was wonderfully sweet and paired perfectly with the cake. I honestly couldn't stop smiling while I ate it. At $3.75 each, both cupcakes felt like an absolute bargain. Ruby's also specializes in custom cakes for birthdays, weddings and celebrations, and after tasting these cupcakes, I can only imagine how incredible those cakes must be. Parking was plentiful right outside the shop, and while there are a few small tables inside if you'd like to enjoy your treats there, it seemed like most people were stopping in to grab dessert and head on their way. My advice? Don't just stop because you happen to be driving by. Make Ruby's the destination. I know I will! Anytime I'm within striking distance of Easton, there's an excellent chance you'll find me standing in front of the cupcake case once again pretending I'm only buying one.

That probably sounds a little harsh, but it's the truth. It is a shame that they don't work on cultivating a better cake, because the product is half-way to stardom! It's gotta be the whole combo to be a successful product. Maybe the ice cream is better? The gentleman helping us was very kind, the decor was very appropriate and cheerful, and the fun facts on the wall were interesting. Showed the decorator a picture of two WIDE yellow lines. I was assured it would be duplicated. Put those two skimpy lines together, wouldn't have made one in the picture provided. We paid $27 for 24 cupcakes. I had to take the yellow and try to swirl it in the white so they would look presentable. So I will wear yellow on Wednesday to make the design of the cupcakes look like they were done on purpose. Didn't mind the price of the cupcakes because they were worth it, but should have had been compensated for the lousy design. Will I get cupcakes from them again...absolutely, but will stick to some design that the decorator should have said she could literally replicate and do.

Nice decor, but overall is definitely a never coming back. It was extremely dark, I thought it was closed. Customer service was trash. Prices were excessive for what you are paying for. I paid $12 for a sample box of 8 minis. They were frozen and I wasn't made aware of this until after payment. Actually, they were freezer burnt. A bakery selling frozen product???!!??? There is a walmart around the corner with plenty of frozen deserts within reason - why should a consumer pay $12 for freezer burnt minis???? If you don't pay enough attention to your packaging before freezing, how do I trust your product???? Plenty of fresh cheesecake baked in house at the Cheesecake Factory for the same prices (imagine that). Save your money and a trip, I know I will.
