Great cheese curds - I try to stop here every time I pass through the area. They have a nice selection of various cheeses - I recommend the aged cheddars, as they are delish! I'm a little disappointed by some of the options - I love a good mozzarella whip, but theirs seem to be made/bagged elsewhere and just don't have that "fresh from the maker" quality I expect at a place like this. Love love love. I miss cheese curds, and this place offers fine, fresh and squeaky curds. So many choices in the cheese varieties, both in different types of cheese as well as the milk used-- cow, goat, and sheep. I prefer the stronger, longer-aged cheeses, and wasn't disappointed. Lots of sizes available as well. The staff is super helpful- was looking for something comparable to a Manchego, and was steered toward the aged Marisa, which was delightful. They make a cave-aged Marisa as well, but they were out. I also accidentally purchased the regular Marisa, and two hours later took it back, and they were happy to refund so I could purchase the correct variety. The 6 year cheddar is phenomenal. They have cheddars from the curd stage (divinely squeaky!) to a 12 year aged. The black goat truffle is very, very good, and one of my favorite items is the goat butter. Very, very creamy and mild, with just a nice goaty finish. Perfect on a lightly toasted sourdough. Definitely a must try if you're a fan of the goat cheeses. I'll be back in February for another visit, and plan to bring a bigger suitcase! read more

Came here to look for cheese curds, but they were all out. :( I did like how they had a lot of kinds of cheese and cheese spreads and honey and oils for you to sample. They have cheeses made from cow, goat, and sheep. A huge selection to choose from. Too bad there were no curds when we visited though. read more

Had a very pleasant experience here! First is that it was a little pricey. Knew that going in but worth mentioning. The store itself is in a small strip mall and the interior was equally small. There was a cheese cooler thing along half the wall as came in and assorted sundries farther back. Other side of store was cheese counter and cash register. Picked up some cheese curds and local summer sausage. Really liked that they also carried local brands of things that complement their cheeses, like summer sausage. Funny story, which is why went here. Met someone at Walmart that had a shirt on witth name of this place. Talked little bit and said he went to work at 4 am or so, think earlier than that. Relayed this to the lady at this store and she said I must've run into one is the cheese makers. Very interesting. Very good products and will be happy to go back sometime! read more

After a morning of visiting Wollersheim vineyard and snagging a nice bottle of wine, we wanted to grab some cheese to go with the wine. Right in Sauk City, there's a nice cheese shop that sells Carr Valley Cheese. The store has a huge counter on the left with different cheese samples, and the right side has a huge refrigerated shelf section for their various types of cheese. The shelves are sorted by which animal produced the milk for the cheese: cow, goat, sheep, and blends. Some of my favorite cheese I tried: - Benedictine - Cave aged Mellage - Menage - Sheep fontina - 6 year aged cheddar - Mild cheddar - Goat feta - Chocolate fudge cheese (it taste like a creamy chocolate spread!) Overall, the lady at the store was very helpful and passionate about cheese. I told her I was visiting from out of state and knew nothing about cheese, and she graciously answered any questions I had, and let me sample a ton of cheese. We ended up buying a lot of the orphan cheeses, which are small pieces of cheese that sell between $0.80-$3.00 so that you can bring back a lot of different types of cheese without investing in large blocks of cheese. They do also sell fresh cheese curds, so it was fun trying a fresh squeaky one for the first time. Of all my cheese experiences that weekend in Wisconsin, the Carr Valley Cheese store was by far the most pleasant. I highly recommend stopping by for a variety of cheese samples if you don't want to bust your wallet with huge cheese blocks that you won't finish. Goes well with the Wollersheim wine! :) read more

So good! We were able to sample anything we wanted and the staff was great at answering all our questions. I am not from the area, so I was new to cheese curds, and now I'm in love. We were able to try different products that they carry at the store as well. The creamed honey was amazing and the beef jerky was excellent. The day prior we visited the factory which is very small and in touch with their community. Since we were driving back to Chicago to stay with friends we stopped at this shop to load up on all the goodness. A proper cheese shop, if on the utilitarian side, display and accessory-wise. Loads of great Carr Valley cheeses. Just my opinion, but this place excels with its less traditional cheese varieties: I don't care for their curd (and at the store it's always older than at factory / dairy-based shops) or their everyday offerings. Their 'odder' / harder to find varieties, though...oh, yummah. Love the bread cheese (all varieties), which is perfect for grilling, along with the wedges of all sorts of cheesy goodness. They get an extra star because they're open far later than most cheesemakers factory stores, so even when I'm working late, I can pick up some nommy goodness. read more

I get here within 10 minutes of closing (after driving almost 20 miles) The employee (sorry, I didn't get her name) was very nice. I got to try cheese curds and she didn't pressure me to buy anything. I left to head back with a bag of cheese curds, a brochure and a magnet so their numbers are always close at hand. Carr Valley Cheese is incredible. They have the best, squeakiest fresh cheese curds I have ever eaten (note: Don't refrigerate them! They're better when they're kinda warm). Now you don't need to drive all the way to Sauk City to procure this delightful cheese, as they have a retail store in Middleton, and some grocery stores (like Cubs on the west side) hock their wares. read more

We were new to Carr Valley and never heard of it before but we needed some cheese while visiting Madison. They are not a tasting establishment but if you request to taste anything they will oblige. We got a bottle of wine at Wollershime and had plans to take it down to the water with some cheese and watch the sunset. This plan was ruined by the incredibly unhelpful young girl working there. If you come here to try the cheese... forget about it. Even though there's a sign that says, "ask to try anything in this case", we asked and she started doing inventory. We watched her for awhile, being the only people in the store, then asked again. She made it seem like a big inconvenience to try anything because she had to open a package. At this point, I walked out. Even though the couple samples sitting out were delicious, I probably won't ever buy their products again because of their very disappointing customer service. read more
