She went through and chose things for me and threw it on a proposal expecting me to book. Once I explained to her my frustration with what happened, she explained that no one knows what they really want. I was appalled and decided that I wanted nothing further from them. I went with another caterer who thought it was best to listen to me and then give me a proposal based on what I chose. My second experience was at my neice's wedding. The ceremony was perfect, but when we got inside, I could hear the owner talking to her employees. I was at a loss of words that anyone would speak to another person that way. I was also shocked at how she spoke to the Wedding Coordinator, my other neice. I understand asking someone to do something, but to angrily demand a Wedding Coordinator to do something is unbelievable. The coordinator had a timeline for the event and the owner had her own timeline, which was not the same. The coordinator and the owner of the company seemed to battle over control the entire night. The coordinator tried to dismiss tables to eat, but then the owner decided that she was doing it. There were two more incidents that night between the coordinator and the owner. The food was ok. We were served from food stations. The quantity of the food we got on tiny plates wasn't the best. The plates were dirty and the silver wear was old and had dried water spots. I was anxious to try the shrimp and grits. The presentation was amazing. I asked the server what was in it and she told me grits, with bacon and shrimp that was fried in bacon grease. Uuugh...I had to pass on that. After both experiences, I am happy that I chose someone else to do my daughter's wedding. It turned out beautifully and without incident. Our chosen caterer didn't try to take over our event. She handled the food and let the Wedding Coordinator do her job.

For Valentine's Day this year, I decided to mix things up a bit and hire a private chef to cook…read moredinner for me and my wife. After some back-and-forth with several prospects, I decided to go with Chef Walter Busconi Lage or "Chef of the World" as he bills himself. He created a few different menus based on our preferred cuisines and we worked together to mix and match some of the elements of each to come to a three-course meal I knew we'd both enjoy. Arriving promptly at 4pm for a 6pm service, he was very friendly and accommodating. Chef Walter brought all of the necessary equipment to perform his craft, and right around 6pm we sat down to our first course of a goat cheese souffle. Impossibly light and rich at the same time, it was a fantastic starter. It came with some mixed greens on the side that were dressed with a flavorful vinaigrette. Our entree was surf and turf: bison ribeye with lobster, served with potatoes dauphinoise and asparagus in an orange zest hollandaise. The bison was cooked to perfection, with a delicious compound butter that helped with the natural leanness of bison. The potatoes were rich and yielding, and the asparagus was tender but still with a nice snap and the creamy hollandaise made it a joy to eat. The one miss on this course was the lobster, which was overly soft and didn't add much to the plate. For dessert we were served a cognac creme brulee with whipped topping. This was the best creme brulee I've ever eaten; the hint of cognac really set off the other flavors and it was not overly sweet. While not inexpensive, Chef Walter is a man who knows his craft. He was friendly, hospitable, punctual, and I wouldn't hesitate for a second to work with him again in the future.
