    What a unique place in the most unexpected location. I had the pleasure and honor to have my birthday party there and I will try to summarize that memorable evening. The meal was very enjoyable but what was even more enjoyable is being able to cook with Chef Jean Pierre himself. The special menu that night consisted of foie gras appetizer, crab cakes, rack of lamb, and a dessert sample. Foie gras was delicate and it was topped with shallots and truffle oil/cider vinegar dressing. The whole thing just melted in your mouth. Same can be said of crab cakes. Rack of lamb was amazing as well. Service was great from Joan, Chef's wife. Chef chatted with all of the guests and talked about the ingredients of each dish as well as preparation technique. If you appreciate classic French cooking you will love this place. Everyone was swooning over Chef's French accent and he is such a nice guy as was evident from our short conversation. In spite of classic French cuisine the place is not stuffy at all. In summary, it was a special night for me. Every dish was executed to perfection with some dishes standing out as the most incredible thing I have ever ate.

Shortly thereafter, my wife and I signed up for the Fundamentals cooking course at The Farm Cooking School - a six class series covering everything from knife skills to roasting, poaching and braising. What we experienced was far better than we expected. These are hands on classes, where we learned about the ingredients, how to utilize them and why they worked in each dish we prepared. At the end of each class, we all sit down and enjoy a delicious meal that by itself would likely cost as much as the class if we bought it at a local restaurant. What a bargain! Since that first series, I've taken over 30 other classes, and continue to take classes every week. I've made French sauces, Mexican moles, Italian pastas, Indian curries, pies, breads, and just about everything else you've seen on a plate. The variety and quality of classes and the food we've eaten has been amazing. Through these classes and the down-to-earth teaching styles of Ian and Shelley, I've learned that it's possible for amateurs like me to prepare meals that taste as good or better than those I get in restaurants. I walk away from classes thinking "Wow, that was so delicious. I can't wait to try this at home!"

Every day they came home excited about what they learned and what they made. They learned great knife skills, safe handling and cooking of meat, how to read and then measure from many types of recipes and they did it along with some other children in their age groups. The teachers were phenomenal and so nurturing and the facilities are extremely clean and organized. At the end of each day, we were able to see and taste with them what they made. I highly recommend this particular Young Chef's Academy as a great way to teach your children culinary skills targeted at their specific age levels.
