Great things are big reasons to celebrate! Birthdays, a 200th review and becoming an Elite All Star!! So, in honor of all these accomplishments, I'm dedicating my 200th review to Chef Lance, who helped make my birthday on Jan 27th perfect, very special and exactly what I had hoped for on many levels! From my first conversation with Chef Lance, I knew I found a wonderful Chef, and person! He replied to my initial contact within an hour of messenging him. Through our many emails and texts, together we created a menu that well exceeded 5 stars!! My birthday dinner was prepared in my home for my family, 6 people total! Dinner was called for at 7:30 and Chef Lance arrived at my home around 4:00 to set up and begin preparations. He was so cordial, knowledgeable and his stories of becoming a chef and all his experiences through the years fascinated me! Now for the good stuff, my menu.... Coconut Shrimp appetizer, Penne alla Vodka, Salad, Chicken Francaise and Honey Glazed Carrots. The entire night felt like we were eating in a very cozy restaurant! Chef Lance plated every dish and we enjoyed it all tremendously! Everything was just delicious! I have to point out certain things that stood out to me: the chicken was purchased from a butcher, jumbo shrimp were used and so incredibly fresh and succulent! The coconut was toasted beforehand and the homemade dipping sauce was nothing like anything I have ever had before. It was fruit based with an Asian twist, just fantastic! Because Penne alla Vodka is a favorite in my family, an extra batch was made so everyone could take some home to enjoy again! After dinner, my kitchen was completely cleaned and all dishes, pots, etc were washed. My daughters BF bought a cheescake for dessert so at that point it was time for Chef Lance to leave. From start to finish, he was in my home for almost 5 hours! I can't rave enough what an experience having a chef prepare an intimate dinner was like! If you are looking for someone who will exceed every expectation you may have, Chef Lance is who you should contact. There's no doubt I will be seeing him in my home again! My sister booked Chef Lance for my Bachelorette Party in East Hampton. We (8 girls) rented a house, he came to us, cooked, served and cleaned up. He was a one man show with the most perfect execution. We had a vegetarian- he accommodated that. Since we also rented the house- we didn't have an over abundance of plates and bowls- so he was doing a lot of washing between courses, it still was all times perfectly, hot, fresh and so tasty. Everyone in the group also could not stop talking about he was quite possibly one of the most humble, kind, and easy to talk to people. Below is what we actually ate: We started with a meat and cheese plate. Perfect little starter. All very mild cheeses so it pleased and the crowd and everyone loved it. He then did a perfect little salad with arugula, cheese, and some other veggies. Next course was a fresh pasta with sautéed spinach, red sauce and for the shrimp lovers, shrimp. He was super accommodating as half of us wanted shrimp and half did not. Main course was a steak, roasted potatoes and asparagus. The potatoes had a lemon to them and were something I've never had and out of this world. Asparagus was perfectly roasted and the steak melted in my mouth. The glaze he put on top of the steak, I could have drank from a bottle, it was so good! Final course was a lava cake. Chef Lance is an amazing Chef. We have used him 4 times for various gatherings and a private dinner for my husband and I. Our most recent dinner that he prepared for us was for 13 of our closest friends on Super Bowl weekend at our home in Sag Harbor. The menu was spectacular beginning with a Fettuccini Alfredo followed by a wonderful Greek Salad. The entree was over the top with 3 choices a prime rib, chicken marsala, and a baked cod. The entrees were complimented by Brussels sprouts with bacon and mashed potatoes. Then if that wasn't unbelievable enough he finished the evening with a fabulous carrot cake and chocolate mousse cake. Chef Lance is attentive to your needs, he helps you plan your evening many weeks in advance making sure it's exactly what you want. He makes you and your guests feel very special. Chef Lance did a in house dinner party for us in a rented house for a 50th birthday party. Let me begin by saying the food was delicious and he was pleasant. There was something that upset me and continues to upset me now. Chef Lance promised us a certain menu and did not deliver. He made substitutions without consulting us and used food, we had purchased for another meal, in our refrigerator without asking. He rushed our dessert so he could leave as well. All of these things would have been overlooked if he answered our numerous texts and concerns addressed to him. He chose to ignore the questions and I feel that is bad business. Just because he got paid (a lot of money mind you) he doesn't care about how we felt. We planned the meal and night for months and he did not give what was asked... it's as simple as that. read more

Chef Lance was great. I obtained his services so that I could have a small, intimate dinner gathering of friends and my fiancee in our home. Chef Lance did a private dinner for 8 adults for Father's Day. The entire experience was great - from setting up the menu (he was very flexible) to the actual meal, which was delicious! But the best part for us was having Chef Lance in our home. He was very accommodating and flexible, from using our rental's kitchen (which was a bit oddly equipped) but also having us around while he was cooking, coming in and out grabbing food for our kids and asking him lots of questions. Let me begin by saying our meal with Chef Lance was wonderful and I would hire him again. The reason for the 3 star rating is two fold. I hired Chef Lance to cook for a group of 8 ladies at a home kitchen for a 50th birthday dinner. We worked out a menu for a 4 course meal and he was very willing to listen to our food requests. The final menu was agreed upon but the night of the dinner almost every course was altered with a substitution. We were never consulted about any changes to the menu and while what we were served was very good it is not what was agreed upon prior to the dinner. Another reason for the 3 stars is that I reached out to Chef Lance prior to my review to ask about the changes and express our concerns and he never responded. There were also feelings of him rushing the end of the meal but we felt it was probably weather related and that was understandable. The overall evening was wonderful and the food was delicious. I just wish Chef Lance had been upfront regarding menu changes and at the very least responded when I voiced my concerns after the fact. read more

Can I give him 6 stars? Wish I could. Chef Lance prepared a dinner party for 25 people on Fire Island and managed all the logistics of getting all the food to the island. I was communicating with him from San Francisco about all the arrangements and he was always very responsive. He put together an amazing menu, which included scallops with pasta, fried oysters, duck sliders and great barbecued chicken. All our guests agreed that it was as if we were at a fine dining restaurant. Chef Lance was in our Fire Island home preparing the meal, never seemed to be rushed or flustered and everything began exactly when we planned. There were great leftovers for lunch the next day. Top Notch!!! Our family reunion of 14 had the pleasure of having Chef Lance for two dinners in Bridgehampton. He exceeded all of our expectations. Had Chef Lance at our home this past weekend for a party for 25 of our friends. Everything he did surpassed our expectations. He arrived at 1 to start cooking and preparing the meal including appetizers and desserts. The 2 waitresses, Michelle and Barbara , could not have been any nicer and more helpful and professional to our guests. As people arrived they were so surprised that we had hired a private chef as my wife swore me to secrecy. Chef Lance had prepared dips for the tables and passing hors d'oeuvres which we all delicious. The main course which included 2 different salads, vegetables, pasta in a basil sauce, filet mignon in a blueberry glaze and panko crusted salmon all drew more than rave reviews. Desserts included a home made peach cobbler, YUM, carrot cake and mini molten lava cakes with vanilla ice cream. Needless to say a delicious ending to a spectacular meal. Chef Lance consulted with us during the evening regarding the timing of the various courses. He was professional, pleasant, conversant with our guests and the staff was great. They cleaned up at the end, wrapped all the leftovers and placed everything in the fridge, washed whatever had to be washed, and wiped down all the counter.
