I make special trips 5 hours each way, to buy five things- andouille, smoked sausage, fresh pork sausage, frozen French bread dough, and fresh dried beans. I bring my big cooler, load up, and plan gumbos, jambalaya meals, and barbecues with fresh sausage, and red beans and sausage. I plan my visits about every six months and budget about $150. These people are the heart of Cajun culture making you feel welcome. Nothing beats Don's meats. Some of the steaks were amazing, but my focus is on the staples. Bread dough is a little extra treat. You can cut it to make 12 rolls, bake the loaf after it has thawed and risen, or my old fashioned favorite- defrost the dough, cut strips. Fry strips in oil. Drain and butter while hot. You can add syrup if you wish, but that's gilding the rose. Makes my mouth water. The service is always fast, courteous and friendly. Visiting home when I hear the Cajun accents. You won't be sorry to make the trip. Service is great! They will cut meat and tell you about the boudin and other delicacies in the store.

For the uninitiated: Tasso is fast-cured, seasoned, and smoked pork shoulder. It's used in stews and simmered foods, softening as it cooks, adding a delicious, unique flavor and bite that's typical of many Southern Louisiana (read: Cajun) dishes. Tasso's difficult to describe, but you'll know it when you taste it. I just received four 1-lb. packages of tasso, shipped from Bourgeois' smokehouse in Gray, LA via FedEx 2Day. The order arrived in good shape, and though the ice packs surrounding the meats had melted, the tasso was smoked (and so, fully-cooked) and it was vacuum-sealed. It went straight into my freezer, and it'll be fine. The cost to ship from Lafourche Parish to San Diego doubled the price of the product, from $7.24/lb to around $15, but I pay that much (or more) for quality steaks and seafood, here at home, and it was my choice to spend top-dollar for meat that I know, from experience, will make my gumbo, red beans, etc. taste better than I could otherwise make them. Kudos to the folks at Bourgeois Meat Market for offering a high-quality product, and for handling the purchase and shipping in a professional manner. I like visiting their shop when I'm in the area, but I LOVE that they don't make me get on a plane to eat what they're cookin'!

You can't think Jacob's without Bailey's or Bailey's without Jacob's. And having them right next…read moredoor to each other adds to that. To say Bailey's is "a poser" to the "real thing" that is Jacob's is unfair. Both stand on their own and are far superior to about anything you can get in New Orleans. The difference between Jacob's and Bailey's andouille is TIME. Jacob's smokes theirs for several more hours than Bailey's. To me, this makes Jacob's a bit over-powering. When I make gumbo with it, it's all I taste, and that is not the goal. So to counter that, I'd have to use less. But if I use less, I get less MEAT. So I prefer Bailey's andouille: less smoke flavor and more meat flavor. They also sell ham hocks, head cheese, crabmeat, tasso, green onion pork sausage, cracklings, file powder, and a ton of other cajun staples. Do what I did: Load up on both and do a taste test. I bet like me, you'll find you like some things from both. Plus, they have the Sausage Man sign to make you smile.
